11.24.13, Low Carb Diet Journal

I stepped on my scale about thirty minutes earlier than I did yesterday and I am up a quarter of a pound, 140-1/4 lbs. Crazy, since I did not have dinner last night.

I enjoyed a full pot of decaf coffee and added heavy whipping cream to all four and a half cups.

Because I did not have any dinner last night, I was hungry earlier than usual. My husband started the barbecue and seasoned a New York steak for our lunch. I wanted a cabbage salad with my steak so I sliced the cabbage as thin as I could and my husband added mayonnaise, salt, pepper, & paprika to it. We split the steak and I also enjoyed the cabbage salad which I ate along with it.

My husband made me another pot of decaf coffee and I ended up drinking all of it. I drank another four and a half cups and added heavy whipping cream to all of them.

When I got hungry much later than usual, I made me a salad. My husband ate at dinner time and had some of his leftover toscano soup. My salad included romaine lettuce, avocado, bacon, celery, jack cheese, cucumber, toasted pumpkin seeds and some of our fresh homemade vinaigrette dressing that I had to make.

11.23.13, Low Carb Diet Journal

I stepped on my scale about an hour later than yesterday and I am down a half of a pound. I weighed 140 lbs. this morning.

I drank a full pot of decaf coffee and added heavy whipping cream to all four and a half cups.

My husband made some pork chile verde the other day so I wanted to eat some before we put it into freezer. He made me a two egg omelet and added the pork chile verde and jack cheese inside as well as a bit more over the top. I was so full after eating this meal that I did not bother making me any vegetables.

I wanted some coffee since I did not think I was going to be having any dinner because I was still full from my lunch. My husband made me a pot of decaf and I ended up drinking the entire pot, four and a half cups with heavy whipping cream added to all of them.

My weight is the same as yesterday, 140-1/2 lbs. I stepped on my scale about an hour earlier than I did yesterday and I am going to begin paying attention to the time from now on.

I enjoyed an entire pot of decaf coffee and added heavy whipping cream to all four and a half cups.

From the time I woke up until I ate around 10 a.m., all I thought about were the pork ribs that I had for lunch yesterday. Instead of waiting until noon, my husband warmed them up for me and I ate the three ribs I had leftover as well as the small side that was also left. When I finished all of my ribs I was full enough to not want to make me a vegetable, so I didn't.

Later in the afternoon, I wanted more coffee. I made me another pot of decaf and over a short period of time I drank the entire pot. I added heavy whipping cream to all four and a half cups and enjoyed every single drop.

When it was time for dinner I made me a salad. My husband made his recipe of toscano soup this afternoon so he had it for lunch and again for dinner. Since there is kale in this soup, he did not want a salad. My salad included romaine lettuce, avocado, bacon, celery, cheddar cheese, cucumber, toasted pumpkin seeds, and the last of our homemade vinaigrette dressing.

11.21.13, Low Carb Diet Journal

My weight dropped an entire pound and I weighed 140-1/2 lbs. this morning.

I enjoyed an entire pot of decaf coffee and added heavy whipping cream to all four and a half cups.

We defrosted a pork butt roast the other day and my husband made us chile verde this morning. It is being made in a crock pot so I will not be eating it until tomorrow since I will be eating another salad for my dinner again this evening.

When we were at the store yesterday, we picked up a couple of slabs of pork ribs. My husband seasoned one half of a slab and then started the barbecue. He soaked the smoke chips in water and when the barbecue coals were ready he added them to it and began slow cooking our ribs. We also picked up some fresh cabbage, mushrooms, and onions at the store so my husband made us a stir fry with a homegrown bell pepper, cabbage, mushrooms, and onion. He cooked the vegetables in coconut oil and also added some red wine vinegar to them. He placed the stir fried vegetables in a bowl and he also added several ribs to a plate and served them to me. Because he only made half of a slab of ribs, he cooked the small end. I ended up eating four of the small pieces that were boneless, and put away the three ribs with bones that were left on my plate. Since I love ribs and I have no problem eating leftovers, I look forward to eating the rest of them tomorrow instead of the chile verde.

When it came time for dinner I made me a salad. My husband had the chile verde and I also made him a small salad. My salad was made with romaine lettuce and it also included avocado, bacon, celery, cheddar cheese, toasted pumpkin seeds, and our homemade vinaigrette dressing.

11.20.13, Low Carb Diet Journal

My weight is down another quarter of a pound and I weighed 141-1/2 lbs. My weight may fluctuate because I do not always step on my scale at the same time each day. This morning I stepped on it an hour and a half earlier than I usually do and because I like to begin my day with coffee, I do not wait.

My husband made me a pot of decaf coffee and I added heavy whipping cream to each cup. I enjoyed four and a half cups over a four hour period and even though it is outside the guidelines of CALP, it is something that I have chosen to do.

We defrosted a London broil yesterday so my husband put it into the marinade this morning. After a few hours he started the barbecue and when the coals were ready, he put it on. He bought a large bag of broccoli when he went to Costco the other day and made some for our lunch. He then pre-cooked the rest so we could separate it into serving sizes and put it into the freezer. He also made some fresh bacon this morning. When our lunch was almost ready, I grabbed a piece of bacon and ate it. I also had a normal sized piece of London broil and a small bowl of broccoli with melted butter drizzled over the top. When I finished my meal, I wanted more meat but I knew that I had eaten enough so I just needed to wait the twenty minutes for my brain to realize it too. 11.19.13, Low Carb Diet Journal

My weight dropped a quarter of a pound and I weighed 141-3/4 lbs. this morning. I am so tired of watching my scale bounce up and down but the reality of my situation is that I lost a lot of weight eating exactly what I want and I am still able to maintain it!

I enjoyed several cups of decaf coffee and added heavy whipping cream to each one of them. Because I had coffee leftover from last night and my husband made me a fresh pot this morning, I did not keep track of how many cups I drank.

I have been doing a lot of reading again lately. I know that the weight I have gained came from my over eating at a buffet for three days in a row. For some reason I could not get enough cheesecake and not only did I eat it three days in a row, but I had one piece the first night and then I had two pieces each night after that. It just proves to me that I still have a problem with sugar and when I avoid it, I don't seem to miss it. With that said, I just got a coupon from Cold Stone Creamery for a buy one, get one free. Since it expires in mid December, my next indulgence will be ice cream. Good thing it is located an hour away.

Because I know that I eat too much protein for my current weight each day, I am going to try another experiment. My plan is to eat protein and vegetables for lunch, and for dinner I am going to make me a salad. I will include an avocado as my carbohydrate, and add my protein choice to it since I know that I will not eat as much as I do when I eat it as the main part of my meal.

For lunch today, my husband defrosted some of his homemade broccoli & cheddar cheese soup. Since it contains both protein and vegetables, I believe it was an excellent choice to start my new experiment. 11.18.13, Low Carb Diet Journal

My weight is the same as yesterday, 142 lbs.

I enjoyed a full pot of decaf coffee and added heavy whipping cream to all four and a half cups.

I wanted to get a workout done today but when I got ready to do it, I did not feel like it.

When it came time for lunch my husband reheated the other half of my leftover New York steak and I made us each a salad. Both of our salads were made with romaine lettuce, celery, cheddar cheese, and our homemade vinaigrette dressing. I enjoyed my salad first and when my steak was warm, I ate it. My meal was plenty and I was satisfied when I finished it.

I was in the mood for coffee so I made me another pot of decaf. I enjoyed two cups with heavy whipping cream.

My husband made us each a pork chop for dinner. He also removed a baggie of slightly steamed broccoli from the freezer that he previously made and warmed it up. I was served a pork chop and a bowl of broccoli with butter drizzled over the top. I ate my entire pork chop and about a half of my bowl of broccoli because I was full.

11.17.13, Low Carb Diet Journal

My weight is 142 lbs. I am not surprised since I had a super burrito for lunch yesterday. Carbs, carbs, and more carbs!

I enjoyed a full pot of decaf coffee and added heavy whipping cream to all four and a half cups.

When it was time for lunch I made two salads. They both included romaine lettuce, celery, cheddar cheese, and our homemade vinaigrette dressing. My husband warmed up the leftover chicken and served me a quarter, the breast and wing. After I finished my salad I began eating the chicken but I only ate a small amount since I was not in the mood.

When it came time for dinner, I was hungry because I did not eat very much protein earlier. My husband started the barbecue and when it was ready he put a New York steak and some hot links on the grill. When the steak was ready, he served me the entire steak. He also warmed up the stir fried vegetables that he made the other day. There was bell pepper, onion, and red cabbage. I ate and enjoyed half of my steak and also ate half of my bowl of vegetables.

What surprised me the most about the amount of food I ate today was that I did not eat more. Usually after I eat a heavy carbohydrate meal, like the super burrito I had yesterday, I lose control over my appetite and it takes me a few days to get it back under control.

11.16.13, Low Carb Diet Journal

My weight is down one quarter of a pound and I weighed 140-3/4 lbs.

My husband and I got ready to go out of town this morning. While getting ready, I enjoyed two cups of my leftover decaf coffee and added heavy whipping cream to both of them.

I noticed the dogs barking around 4 a.m., and I thought that they ran some raccoons up a tree but when we drove up our driveway around 6 a.m., I noticed what I thought was a deer laying on the ground. Wasser, our oldest daughters dog, walked over to it so I got out of the car to see if it was still alive. It turned out to be our neighbors donkey and she had gotten her foot tangled in our fence. When I could not get her foot free, I asked my husband to go down to the garage and get some wire cutters so he could cut the fence. He headed down to the garage while I hopped into the car to notify the neighbors. When I returned, the donkey was up and standing but she was not putting any weight on the foot that had been tangled. Our fence has one string of barbed wire on the bottom, field fencing in the middle, and three strands of barbed wire over the top. It appears she went over the field fencing and under the barbed wire and somehow caught her foot in the field fence. She ended up having a scratch across her nose and her foot was also scratched and bleeding from the barbed wire. Click here to continue reading, or leave a comment »

11.15.13, Low Carb Diet Journal

My weight is down three quarters of a pound and I weighed 141 lbs. this morning.

I enjoyed a full pot of decaf coffee and added cream to all four and a half cups.

When it was time for lunch, I was surprised that I was not hungry. Even though I am trying to follow my hunger, I went ahead and ate. I knew it was only a matter of time before I became hungry since I did not eat dinner last night, so I thought I should eat. My husband warmed up the last of our leftover pork roast and he also stir fried some of our homegrown bell pepper, onion, and red cabbage in coconut oil. He served me a chunk of pork roast and placed my vegetables in a bowl. I ended up eating all of my pork roast, minus the fat, and became full after eating only half of my bowl of vegetables.

When it was time for dinner, I was not hungry. I wanted some coffee so I made me a pot of decaf. I ended up drinking two cups and I added heavy whipping cream to both of them.
