2.24.13, Low Carb Diet Journal

My weight is the lowest I have seen in over thirty years, 131-1/2 lbs., dropping an entire pound since yesterday.

Since I am so close to my ideal weight, I have been trying to figure out how to lose the last of it. I tried a low calorie experiment a couple of months ago which went well since I lost seven pounds, but I am trying to understand how calorie and fat consumption actually affect me. I am really confused since I ate a lot of fat yesterday, which is rich in calories, but I lost weight? Personally, I would prefer to eat more fat since I love butter, cheese, coconut oil, cream, and cream cheese, so I am back to eating dairy.

I began my day with my two cups of green tea and finally caught up with my emails, google+, and I also updated my menus. Needless to say, my morning disappeared quickly, but it was okay since I still had plenty to do to keep me busy after lunch.

I had a chicken salad for lunch. I made my salad with half of a fillet of chicken breast, romaine lettuce, avocado, celery, cucumber, and some of our homemade cilantro dressing. I grabbed a couple of pieces of my dark chocolate almond bark and my meal was complete.

I stayed busy all afternoon and when the ham was ready to take out of the oven, I made me another salad. I ran out of celery and cucumber so my salad consisted of romaine lettuce and some of our homemade cilantro salad dressing. My dinner was simple, ham and a lettuce salad!

2.23.13, Low Carb Diet Journal

My weight popped back up to 132-1/2 lbs., still one-half pound away from my lowest weight!

I began my day with my two cups of green tea while catching up with some of my computer work. I did not spend very much time on it before I sat it down so I could get busy with other things.

We have had a few changes around here since my son and his girlfriend split up and she moved out. I ended up cleaning and organizing his house after she left, and I have been going over there twice a week to collect his laundry and keep it up.

Once I finished his house, I stripped my bed, started the laundry, and resumed my own cleaning and organizing.

Lunch was a bowl of our homemade broccoli and cheddar cheese soup. My husband added one piece of bacon to my bowl of soup and it was delicious. I cleaned the kitchen and resumed my work.

I washed and dried four loads of clothes while filing my recipes into each recipe book. I have been collecting recipes and it has been difficult locating them when they are loose and not organized. It is amazing how fast the time goes by when I stay busy.

I fed all my animals and while I was out there, I even cleaned a few cages before returning to the house and resuming my work.

I had a chicken salad for dinner. I made my salad with half of a fillet of chicken breast, romaine lettuce, avocado, celery, cucumber, and some of our homemade cilantro dressing. I grabbed one of my containers of dark chocolate almond bark and even though I knew I should have stopped eating them, I finished all of them that were left in the container. Needless to say, I was satisfied with my meal.

2.22.13, Low Carb Diet Journal

My weight is back down to 132 lbs. This morning was much different than usual. Instead of grabbing my computer while drinking my two cups of green tea, I grabbed my first cup of tea and got started with more of my deep cleaning. My pantry is located in my utility room and since the shelves are now organized, I grabbed some oil soup and started oiling the cabinets. I also cleaned two doors and the floor on my hands and knees. Once it was clean, I continued with the kitchen floor. Once that floor was finished, I continued with the tile in my entryway.

When it came time for lunch, I made a couple of salads and added some sauteed shrimp to mine. I started with some romaine lettuce and added avocado, celery, cucumber, and our homemade cilantro dressing to it. I defrosted some shrimp and fried them in a pan of olive oil. I added the shrimp to my salad and completed my meal with some dark chocolate almond bark. I washed the dishes and left them in the drainer to dry.

I continued working on my house, one room at a time. My utility room, kitchen, entryway, living room, and guest bedroom are all organized and clean. I still have the hallway, guest bath, master bedroom, master bathroom, office, office bathroom, and game room left to do.

Dinner was a bowl of broccoli and cheddar cheese soup. I added a piece of bacon to my soup and my husband also made us some chicken breasts. He cut them into fillets and seasoned them with salt, pepper, garlic, and turmeric before frying them in bacon drippings. I completed this meal with one half of a chicken fillet, thoroughly enjoying my meal. Even though we still have a small amount of soup left, it is so good and filling that we will be making it again. I cleaned the kitchen as soon as we were done and my house is becoming clean and orderly.

2.21.13, Low Carb Diet Journal

My weight was 132-1/2 lbs., up a half of a pound since yesterday. I was the first to wake up this morning so I got the fire started and made me some green tea. I spent my morning getting my computer work done and before I knew it, it was time for lunch.

My husband tried a new recipe of broccoli and cheddar cheese soup that he made for our lunch. The soup was made with broccoli, cheddar cheese, cream, and cream cheese, so dairy was on my menu for the day. I enjoyed my bowl of soup and when I finished, I wanted some dark chocolate almond bark to complete my meal. Since I didn't have any in the refrigerator that was already made, I made some. When it was ready, I stuck in in the freezer so it would be ready when I finished my soup. I completed my meal by grabbing a piece of my homemade almond bark and thoroughly enjoyed every single bite.

I was cleaning, putting stuff away in the pantry, when I decided to organize it. Since we are eating more whole foods these days, I wanted to get rid of the items that we no longer use. I transferred the coconut flour, flax seeds, pumpkin seeds, sesame seeds, etc., into jars and used my permanent marker to label each one. We have quite a bit of seasonings and spices so I moved the large containers that we use to refill our bottles into the pantry and put the small bottles into the kitchen for our convenience.

I stopped working when it became time for me to eat my dinner. My husband seasoned a pork chop with salt and pepper and then fried it in bacon drippings. Since I did not have a salad earlier, I made one to go along with this meal. It included romaine lettuce, celery, cucumber, and some of our homemade cilantro dressing drizzled over all of it. 2.20.13, Low Carb Diet Journal

My weight is back to 132 lbs. It took me six days to lose the three pounds I gained while eating at the seafood buffet, but the main thing is that I managed to lose it. I was concerned that I was not going to be able to maintain the seven pounds that I recently lost, but now that I am back to my lowest weight, I am confident that I will.

It was cold when I got up this morning and it was pure white outside. We got at least four inches of snow yesterday and last night, but it should be gone my noon today since we are expecting a nice, sunny day. My husband got up before me so he made the coffee, tea, and started the fire. By the time I arrived in the living room, it was nice and warm.

I grabbed my first cup of green tea, worked on my computer for a short time, and then I got busy. I have a lot to do around my house so instead of waiting until spring when I can work outside, I got started on the work I can get done inside.

I finshed my second cup of green tea while getting my work done and took a break when it became time for lunch. My husband had already defrosted a couple of rib steaks early that morning so he started the barbecue. When the barbecue was ready for the steaks, I started making us a couple of salads. My salad included romaine lettuce, almonds, avocado, celery, cucumber, and mixed some of our homemade cilantro dressing into it all. My husband made me some mushrooms to go along with my steak and my meal was superb!

I resumed my work and was surprised at how much time went by because it was time for dinner. My dinner included the leftover rib steak that was made at lunch time and some steamed broccoli drizzled in butter.

I was pleased with the amount of work I accomplished and I will start on something else tomorrow!

2.19.13, Low Carb Diet Journal

My weight was 132-1/4 lbs., losing a quarter of a pound since yesterday. Now I am only one-quarter pound away from my lowest weight of 132 lbs.

I was not ready to get out of bed this morning but my dog decided it was time for him to go outside so he needed me to let him out. It was cold again this morning and I was happy when my husband got up not long after I did. He started a fire and also made me some green tea while he made him some coffee. He poured me a cup, tended the fire, and I enjoyed my cup of tea while trying to get warm. I enjoyed my second cup when he refilled it at the same time he was getting his second cup of coffee.

We have a chance of snow a couple of hundred feet above us today and this evening it may drop to our level which means it is cold outside. My cold is better although I am still blowing my nose. I am feeling well enough to start my exercises but I did not get a chance to get it done this morning so I will see how well I do in getting it done this afternoon.

Lunch was a chicken salad. I cut up one of the leftover chicken breast fillets and added it to my salad that was made with romaine lettuce, chopped almonds, sliced avocado, chopped celery, chopped cucumber, and our homemade cilantro dressing. I wanted a few more carbs to help balance out my meal so I added a small bowl of pad Thai that was made with chicken, rice noodles, and tofu to go along with my salad. 2.17.13, Low Carb Diet Journal

I was hoping my weight would continue to drop and it did. I weighed 133-1/2 lbs. this morning, dropping another pound since yesterday. My head is still full, but I am feeling better!

I am not sleeping well because of my cold. I got up early yesterday morning which caused me to fall asleep early last night. Since I woke up at 2 a.m. this morning, I hope to catch a nap today so I can stay up later tonight and get myself back to my normal schedule.

I waited until after 6:30 a.m. to have my first cup of green tea. Somehow I managed to make it until late morning before I had my lunch. We had some leftover chile verde and I love it over eggs, so I made me two eggs, over medium. I poured some chile verde over my eggs and enjoyed my meal. When I finished, I wanted to eat some more so I made me a salad. My salad included romaine lettuce, almonds, avocado, celery, cucumber, and some Hidden Valley Ranch dressing. I was out of my homemade cilantro dressing and I did not want to take the time to make it since I had already eaten part of my lunch. Once I finished eating my salad, I grabbed a clementine and completed my meal by peeling and eating it.

Since I had such a heavy meal, I did not want to sit around after lunch so I got busy. I have quite a bit of stuff to do around this place so I worked throughout the afternoon. I thought I would get a nap but when I sat down, I was ready for dinner. My husband steamed us some broccoli and also stuck the last piece of leftover pork roast in the toaster oven. When the roast was ready, he drizzled some of the glaze over the top and added some butter to the broccoli he placed in a bowl for me. My meal was delicious and satisfying!

Since I did not catch a nap, I thought I would pass out early but I watched a movie that kept me awake. Not feeling tired until around 10 p.m., I finally went to bed.

Low Calorie Experiment

My weight loss journey is still in progress. Actually, I am so close to my ideal weight that I made a change to my way of eating at the end of last year. I was tired of seeing a low weight of 140 lbs., and became desperate to show some weight loss by the end of 2012. My thought was to continue my program, cutting down on my portion sizes, and it went well the first month. I started tracking my food in fitday.com and lost 7 lbs. after the first month, seeing my weight drop to 132 lbs. for the first time since 1982.

The second month got a lot tougher. My goal was to lose another 7 lbs., reaching 125 lbs. Somehow, I managed to begin choosing foods that I would not normally eat because they were less calories. Some days I wanted more food and other days I would have been happy with less. Unfortunately, I made sure to eat enough calories each day so I would not go into starvation mode.

After seeing the same number on the scale for a couple of weeks, I went out to dinner to celebrate a family birthday at an all you can eat sushi buffet. I don't know if it was because of all the information I was reading about weight plateaus or if it was because I was tired of limiting my food, but I ate everything I wanted to eat that night. Since I had no idea how the food was prepared, leaving no chance of getting even close to being accurate, I did not bother trying record my food in fitday.com. I resumed logging my meals the following day and it did not take me long before I got tired of measuring and logging my food each and every time, each and every day. 2.16.13, Low Carb Diet Journal

My weight dropped a pound and a half and I weighed 134-1/2 lbs. this morning. I started my day with two cups of green tea and I am still fighting my hunger from the weekend when I ate it three times in three days. Funny, I do not feel the effects of eating wheat, but it does affect my appetite.

I was going to have another shrimp salad but then I remembered the leftover pork roast. I snacked on tortilla chips while making me a salad. I added romaine lettuce, almonds, avocado, celery, cucumber, & our homemade cilantro dressing to it. I popped the pork roast into the toaster oven and ate my salad while it was warming up. When my pork roast was ready, I drizzled some of the glaze over the top and enjoyed every single bite. While at the store yesterday, I picked up some cuties, also known as clementines. Since they smelled so good, I peeled and ate one, completing my meal.

Dinner was chile verde. My husband began cooking it in the slow cooker early in the morning so I could smell it all day. When it was time for dinner I was going to have chile verde over eggs but I was not that hungry so I had a small bowl of chile verde. When I finished my bowl, I grabbed one more piece of chile verde and then I cleaned some celery for both of us.

2.15.13, Low Carb Diet Journal

I was not surprised to see my weight pop up to 136 lbs. since I ate more than I usually do yesterday. My plan was to enjoy Valentine's Day this year so I knew I was going to be eating some kind of chocolate after the buffet.

Today is a new day and I will be watching my portion sizes again. My cold is still hanging around and I am going to get well before I start exercising again. I had a mammogram and some lab work scheduled for this morning so I skipped my two cups of green tea and took some water with me. After my tests, I did some running around since I was in town.

I stopped at the bank and then I went to a couple of thrift stores to see if there was anything I wanted. I picked up a book called Protein Power and I also got a mandolin for my husband. He likes to make his own potato chips and now he should be able to make them a little easier. I made one last stop at the grocery store and then I made it home in time to fix me lunch.

I picked up some shrimp while at the store so I made myself a shrimp salad for my lunch. My salad included romaine lettuce, avocado, celery, cucumber, shrimp, and some of our homemade cilantro dressing. My husband made some fresh tortilla chips so I had some of those with my meal.

I ended up drinking both cups of my green tea at some point in the afternoon.

While at the store earlier, I also picked up a pork roast. My husband cut off a third of it and after seasoning it with salt and pepper, he popped it into the oven. The other two-thirds of the roast will be made into chile verde tomorrow. My dinner was a piece of pork roast and I also added some of the glaze that was made by my husband by reducing the sauce. I cut a few stalks of celery and completed my meal.
