3.15.13, Low Carb Diet Journal

My weight dropped back down to 130-1/4 lbs.

Apparently, my new wake up time is 6:30 a.m., since that is when my dog thinks I should get up. Instead of grabbing my computer and enjoying my two cups of coffee with cream, I drank it while getting some things put away. I have a table where I put everything that I don't want to deal with at the time, so I started with it.

As soon as it was warm enough to go outside, I began my work out there. We are having some beautiful weather in between the rain, so I am taking every opportunity to get my outside work done before it becomes too hot for me to want to work outside.

Lunch was leftovers. My husband warmed up the rice and the chicken and then he put some rice in the bottom of my bowl before adding the chicken in peanut sauce with broccoli and carrots. As soon as I finished it, I grabbed a homemade cheesecake cupcake and totally loved my meal.

I returned outside and my afternoon disappeared quickly. Before returning to the house, I fed the chickens and rabbits, collected a few eggs, and was satisfied with the amount I was able to get accomplished. I still had our lunch dishes to wash so I cleaned the eggs and then I got them done.

Since I did not have a salad with lunch, I decided to have one for dinner. I started with romaine lettuce and added celery, cheddar cheese, and cucumber. I defrosted some shrimp and cooked them in some olive oil before pouring them on top of my salad. I then added some Ranch dressing and that was my meal. After washing the dishes, I kicked the dogs out of my recliner and watched a movie with my husband.

Breakfast: Coffee w/cream
Lunch: Thai Pra Ram chicken in peanut sauce w/broccoli, carrots, rice, cheesecake cupcake
Dinner: Salad of romaine w/celery, cheddar cheese, cucumber, shrimp, & ranch dressing

3.14.13, Low Carb Diet Journal

My weight popped back up to 131 lbs. this morning, and the only thing I can guess is that I ate too much protein yesterday. Of course, I have no idea why it does what it does so I will assume that it is “just because”!

I enjoyed both cups of my coffee with cream, and started a load of laundry. We were expecting another beautiful day so instead of waiting until after lunch to go outside, I went out early. I keep reading how staying active is just as good as exercise so I proceeded to feed the chickens and I was able to collect one egg. I then went into the rabbit barn and got started with cleaning the cages. I removed the shade cloth from under each one of the rows of cages, and began hosing them down. When I got ready to hang the first one, I decided to wait and moved those rabbits to another row that already contained rabbits. I worked for three hours and then my husband called me in for lunch.

We had a recipe that we got from Google+ that we wanted to try. It is called Thai Pra Ram Chicken in Peanut Sauce. It was made with chicken breasts, broccoli, carrots, coconut sugar, peanut butter, soy sauce, water, coconut oil, garlic, coconut milk, curry powder, and red pepper flakes. I fixed my bowl with a small amount of rice and then I topped it off with the chicken recipe. It was delicious and we will be making it again. I then grabbed one of my cheesecake cupcakes and it was also delicious. My meal was fantastic and I definitely look forward to eating the same exact meal tomorrow! 3.13.13, Low Carb Diet Journal

My weight popped up a quarter of a pound and I am back up to 130 lbs. Since this seems to be my normal routine, I will just have to wait until it drops again!

We were expecting a beautiful day. My husband thought it would be a good idea to pick up the chairs I bought at the thrift store yesterday. Since we had to take the truck, we took both dogs with us. After loading all of the recyclables, we headed upcountry so we could go to the dump and drop off the cardboard, e-waste, and motor oil. We then went to the recycle center and turned in the bottles and cans, leaving the truck empty so we could pick up the chairs. Neither my husband or I use recyclable containers, so all of them belonged to our son. I collected the money so I could give it to him.

We proceeded to go down the hill into town. Since we were in town and I needed feed, we stopped at the feed store so I could get a few bags of chicken and rabbit food. We then proceeded to the thrift store and loaded up all five chairs. We were then ready to head home.

When we arrived, my husband unloaded the chairs and I removed the ones that were around the table. I placed four of the chairs around our table and we were both pleased with the quality, as well as how well they matched our table. Since it always takes a lot of time for us to run around, we were both hungry because it was past noon.

I had some leftover chicken in the refrigerator that needed to be eaten. I made myself a salad that included romaine lettuce, bacon, celery, cheddar cheese, chicken, cucumber, and topped it all off with Ranch dressing. I added more chicken than I usually do because it needed to be eaten and there was not enough to save. Click here to continue reading, or leave a comment »

3.12.13, Low Carb Diet Journal

My weight was the same as it was yesterday, 129-3/4 lbs. I totally expected it to pop back up into the 130s, and I was pleased to see that it didn't. Looking back, my low calorie experiment is what got my weight moving in the right direction again. Now, I am consuming more fat, without counting calories, and it appears to be moving again. Crazy how my body works, but it keeps me on my toes because I am still learning!

My day started earlier than I wanted it to. If I would have been able to stay asleep, I would have gotten close to eight hours, but it was interrupted more often than I wanted. My dog needed to go outside a couple of times and because my hair was still wet from my late afternoon bath, I kept getting chilled.

I added cream to both cups of my coffee and enjoyed drinking them while surfing the net for a solution to my Shih Tzu's ear problem. He has been shaking his head and crying when he scratches it, so I wanted to find a recipe to clean his ears. Once I found the recipe I wanted to use, I had to try and find one of the ingredients. I went to the CVS, True Value, TSC, Walgreens, & Walmart websites since I have each one of them in town, but I was unable to find it. Since I planned on going to town after lunch, I decided I would check the actual stores.

Lunch was our homemade enchiladas. My husband popped them into the oven and then he made us some homemade tortilla chips. Since I was out of lettuce, he also made us a cabbage salad with mayonnaise, lemon juice, salt, and pepper. I fixed my plate with an enchilada and grabbed my bowl of cabbage salad. I enjoyed some tortilla chips with my meal and when my plate was empty, I did not want or need anymore food. I cleaned the kitchen and then I got ready to go to town.

3.11.13, Low Carb Diet Journal

I did it, I finally reached the 120s! Okay, I only made it to 129-3/4 lbs., but my scale reflected a half of a pound loss since yesterday, and I did it!

After five years of following this program, I am still learning. I believe I have mentioned that I have had days where I had eaten quite a bit of food and still felt the need to eat more. I think I have finally solved that problem and I should not experience it again. All I did was to increase my fat intake and I can't believe how much more satisfying my meals seem to be. Instead of wanting more food when I am finished, I am much more satisfied with less.

My day started at 6:30 a.m., when my Shih Tzu woke me up so he could go outside. I am thankful for the time change because it would have been 5:30 a.m., two days ago. It was too cold for me to stay there and wait for him to come back in, so I climbed back into bed to warm up. My husband was also awakened, so he got up and started a fire to take the chill off the house. He also made us coffee and when it was ready he added cream to both of our cups and then he filled them with coffee.

I enjoyed both cups of my coffee while I surfed the internet for a king size bedspread. Since I am shopping for my son, I need to find one that is inexpensive because he will be laying across it or sitting on it to play his video games. I found one at Ikea for a decent price but I am going to wait to buy it after I go to the flea market and see if I can find one there.

In case anyone has noticed, I have not been doing any type of formal exercise these last few weeks. For the most part, I have been staying active, so that counts as far as I am concerned.

I was going to make the enchiladas for lunch but I had to deal with something that took longer than I expected. Since it was time for lunch when I finished, my husband warmed up the leftover stew for the two of us. After I finished my bowl of stew, my husband was eating an apple and shared it with me. 3.10.13, Low Carb Diet Journal

My weight is the lowest I have seen in thirty years. I weighed 130-1/4 lbs. this morning and I am less than a half of a pound away from the 120s. As I stated before, I am happy with my weight, but I still have more to lose if I want to get rid of the last of my remaining belly flap.

We moved our clocks forward this morning and I definitely prefer waking up at 6:30 a.m., instead of 5:30 a.m. Now, if all goes well, I will continue to get up between 6:30 and 7:00. My husband had my first cup of coffee poured and ready for me when I got up. He had the fire started, but it was only beginning and it was still cold in the living room. I grabbed my footsie pajamas and put them over my nightgown since they keep me nice and warm. Actually, I have three pair and I have been putting them on most mornings since Christmas when I received my first pair.

Yesterday, I answered a question in one of the support groups I still follow. I spent some time commenting on some of the posts and then I updated my menus for the last couple of days. My husband started a pot of stew for our lunch and I put my computer down because I had several things I wanted to get done.

We had stew for lunch. My husband made it with the stew meat from our grass fed cow. He browned the meat and then added bell pepper, cabbage, carrots, celery, onions, and potatoes. I was surprised by how filling one bowl of stew was and after I finished it, I grabbed an orange. Once my meal was completed, I cleaned the kitchen so I could go outside.

I fed the chickens and then I had to catch one of them because she had something stuck on her foot. I don't have any idea what it was but I was able to cut it off of her without it causing any damage. Needless to say, she moved much better when I put her down so she had no problem eating with the rest of them. Click here to continue reading, or leave a comment »

My weight dropped back down half of a pound and I weighed 131 lbs., this morning. I spent years fighting hot flashes and the last six months I have not had any. Yesterday, I had a horrible day because they were constant. I quit drinking coffee and, after awhile, they seemed to disappear. Recently, I began drinking coffee again so instead of coffee, I was going to have tea with cream. When I tried it, I did not like it so I dumped my cup and poured me a cup of coffee with cream. Since I can't seem to limit myself to one cup, I poured another and hoped for the best.

Every Saturday, there is an auction/swap meet/flea market in town. Since I always see them setting up when I leave town early on Saturday mornings, I wanted to go. Unfortunately, my husband and I did not get out of the house until 10 a.m., so I thought it was over when we drove by. My husband said he thought he saw it set up inside, but I did not see it going on so I told him to continue to Walmart so we could get the items we needed. We also stopped at Kmart and then The Dollar Store. By the time we finished and we drove by, I was hungry and wanted to continue home. Since I now know that the flea market is ongoing, we will make it one of these days.

We were both hungry when we arrived home. I wanted sweet potatoes to go along with my leftover ribs, so my husband made me some. I put away the groceries and other things while my husband made himself some homemade potato chips. Since I wanted to try them and I couldn't eat just one, the three I ate were delicious. He deep fried my sweet potatoes and also grabbed the leftover ribs out of the refrigerator and heated them in the toaster oven. I made us a couple of salads and mine included romaine lettuce, avocado, celery, cucumber, flax seeds, and some of our homemade vinaigrette. I fixed my plate with the leftover St. Louis pork ribs and some sweet potatoes and my lunch was superb! Click here to continue reading, or leave a comment »

My weight is up half a pound and I weighed 131-1/2 lbs. this morning. No complaints from me because I finished my homemade ice cream yesterday and it was worth every ounce I gained from it!

I started my day with my two cups of coffee with cream. I did not have a lot of energy so I limited any and all of my work to only what I had to do.

I had a leftover rib steak for lunch. I popped it into the toaster oven to warm up and fixed me a salad. My salad included romaine lettuce, avocado, celery, cucumber, flax seeds, and I made a different vinaigrette dressing with red wine vinegar, olive oil, liquid aminos, and sesame oil. I tried to follow a recipe my mom made when I was growing up, but it did not taste anything like I remember. In other words, it is not as good as I would like, but it is edible. Next time I will make it with white vinegar or coconut vinegar because I do not like the strong taste of the red wine vinegar in it. I started my meal with my salad and I was surprised that I was unable to finish my steak. I only had a small amount left and I put it away for another time. Since I was satisfied with my meal, I did not go looking for anymore carbohydrates to add to my meal since I did not want anymore to eat.

I have been trying to include more fat in my diet and it seems to be much more satisfying to me. I used to think that eating enough protein would help me get the right amount of fat, but now I believe I was eating too much. Recently, I read how too much protein will convert to fat when it is eaten in excess. Now that I am eating more fat...bacon grease, butter, cream, oil, mayonnaise, nuts, etc., I seem to be more satisfied with eating less protein.

When I went out to feed my animals there were two eggs to collect. None of my rabbits had any babies so I will give them a couple more days. If there are still none, I will breed them again. Click here to continue reading, or leave a comment »

My weight popped back up to 131 lbs., which means I gained a half of a pound since yesterday. At this point I am happy to be hovering around 131 lbs., since I still love how I eat and I am so close to my ideal weight.

I started my morning with a cup of coffee with cream. While drinking it, I finally had the time to update my menus. I enjoyed my second cup and when I finished, I began drinking my water. I wanted to see if I had any baby rabbits so I postponed reading my emails and headed outside to check. Unfortunately, there were none. It was too cold for me to want to stay outside and feed the chickens and rabbits so I postponed it until later and headed back into the house to warm up.

I did not bother to pick up my computer when I returned because I wanted to try and organize my spice cabinet for the third time. We have had our spices on a rotating spice rack and I wanted to make each bottle visible. At this point, I am unable to find a solution without spending any money, so I put it back the way it was and I will continue to work on a solution.

I had leftover beef and cabbage for my lunch. My husband put some rice into a bowl and then he topped it off with the last of the beef and cabbage. Since I like to eat a cabbage salad with this meal, my husband made us one. When I finished, I put the last of our homemade ice cream into a bowl and added some crushed almonds to it.

After cleaning the kitchen, I picked up my computer long enough to read my emails. As soon as I finished, I put it down again. I found some drawer organizers that I had in storage so I dumped my junk drawer into a box to sort through later. Click here to continue reading, or leave a comment »

My weight dropped a pound and I weighed 130-1/2 lbs. The coffee was ready when I got up and my husband poured me a cup with cream. I checked my email and then I continued to work on my bookwork until it was time for me to stop for lunch.

My husband made us some ginger beef and rice for lunch and it was up to me to make our salads. My salad included romaine lettuce, celery, cucumber, and our homemade cilantro dressing. Normally I eat my salad before my meal but the ginger beef and rice were ready at the same time, so my husband added some rice to a bowl and then he topped it off with the ginger beef. This meal was delicious, but it was a bit spicy so I was happy to be able to eat it with my salad. We still have some of our homemade ice cream in the freezer so I took it out and added some to a bowl. I grabbed the chopped almonds and sprinkled them over my ice cream, finishing my meal.

I had to go to town later in the afternoon so I continued to work on my bookwork until it was time for me to get ready. My husband had some things he needed to pick up, so he joined me. We made our stops and we even stopped at a couple of thrift stores. I was happy to find some baskets that will help me to organize my cabinets and I even picked up a couple of line dancing VHS tapes. As far as I am concerned, I need to stay active in order to reach my goal of becoming fit and healthy, so anything that gets me moving is a good thing.

When we arrived home, my husband unloaded the car while I grabbed the scraps bucket and headed up to feed the animals. It was not raining but it sure was cold outside. My chickens are beginning to lay eggs again so I collected two of them and put them in my empty bucket. I checked on the baby bunnies and they were nice and warm. I hope I have some new ones tomorrow when a couple of my other does are expected to deliver. Click here to continue reading, or leave a comment »
