3.24.13, Low Carb Diet Journal

I would have bet money that my weight was going to pop up this morning. My weight was 129-1/2 lbs. again this morning, and that was after eating my homemade gluten free brownies, tasting my homemade blueberry scones, going back for a second helping of London broil, and stepping on the scale an hour earlier than usual.

My husband got up at 5 a.m., and once he is up, he does not bother trying to go back to sleep. I had awaken a few minutes before him and I said something to him as he was getting dressed, so I guess he thought I was ready to get up too. Unlike him, I can go back to sleep, and that was my intention. Since it is his habit to start a fire, make coffee, and let the dogs out after he gets up, it was automatic for him to pour me a cup of coffee when it was ready. He informed me that my coffee was getting cold so instead of trying to go back to sleep, I got up to drink it. At least I am getting an early start on my day!

Because I stepped on the scale earlier than I normally do, I decided to step on it again about four hours later. This was after my two cups of coffee with cream and getting started with drinking my water. Needless to say, I was shocked to lower my balance beam another half of a pound because I weighed 129 lbs. Now that I am getting closer to my ideal weight, I can see and feel the smallest changes in my body and my stomach flap is actually getting smaller, which is a good thing.

I had a coffee cake recipe that I wanted to make. The topping of the cake included walnuts, brown sugar, cinnamon, and butter. The cake was made with butter, eggs, coconut sugar, coconut milk, salt, vanilla, coconut flour, and baking powder. Click here to continue reading, or leave a comment »

My Body Composition Results

Even though I have lost over a hundred pounds, which makes me much smaller than I was when I began my program five years ago, I have a hard time accepting that I am no longer fat, thanks to my remaining belly flap. I am still watching my body shrink so I decided that it was time for me to take a really good look at my naked body.

My thoughts:

Gravity does not look good on me;

I would look much better if I could lift and tighten up a few areas;

My body looks better than I ever thought possible;

Clothes do a wonderful job of hiding my imperfections;

The only people that actually see my flaws are my husband and me.

My conclusion:

I am healthy and fit so it is now time for me to change the way that I think about myself!

I discovered thrift stores after I began losing weight because I needed to buy clothes that fit. Since I was confident that the program I was following would lead me to success, I did not want to spend money on new clothes because I did not plan on wearing them very long. Over many years of yo-yo dieting, I had acquired jeans in sizes 14, 16, and 18. Size 18 was the largest pair I owned, not because it was the largest size I should wear, but because I refused to buy a bigger size even though I could not fit into them.

Because of my fabulous program, it did not take me long to go from not being able to get into my size 18 jeans, to wearing them. As the time passed, I went from size 18, to 16, and then I reached the smallest size jeans that I owned, 14. Each time I got myself into a smaller size, I donated the ones that I used to wear because I had no intention of ever wearing them again. Click here to continue reading, or leave a comment »

3.23.13, Low Carb Diet Journal

I was up early this morning and started my day by stepping on the scale. My scale read 129-1/2 lbs. this morning.

I drank my two cups of coffee while catching up with my emails. I am really enjoying Google+ and decided to try a few recipes that I found because I have an abundance of eggs and they sounded good. The first one I made was called Clean Eating Freedom Brownies. The recipe called for coconut flour, cocoa powder, coconut oil, eggs, maple syrup, and vanilla extract, but I substituted dark cocoa powder for the cocoa powder and coconut sugar for the maple syrup. I also added walnuts. After pouring the batter into the pan, they were spread out thinner than I liked so I set my timer for five minutes sooner than the recipe called for. I am happy that I did because five more minutes and I believe they would have burned. I removed them from the oven and set them on a wire rack to cool.

I cleaned the dishes and then I got started on the second recipe I wanted to make for my husband. It was called Flourless Blueberry Scones and they were made with almond flour which I made by grinding up some toasted almonds, sea salt, baking soda, dried blueberries, unsweetened coconut, egg, and agave nectar. Since I prefer to use coconut sugar or honey in my baking, I substituted honey for the agave nectar.

After I put the scones into the oven to bake, the brownies were cool enough to try. I tried a piece and even though they were not as sweet as traditional brownies, I liked them. My husband is not as fond of chocolate as I am, but he liked them well enough to eat his fair share. I will definitely be making them again only the next time I will be using a smaller pan so they will be a bit thicker. Click here to continue reading, or leave a comment »

3.22.13, Low Carb Diet Journal

I have been getting up early every day and this morning when I needed to, I overslept. I was supposed to pick up my granddaughter at 7 a.m., and even though I woke up at 6 a.m., I fell back asleep. I did wake up at 6:40 a.m., and then I had to rush to go and get her. I drank my two cups of coffee while getting dressed and left as soon as I could. Her mom and her only live about fifteen minutes down the road so even though I got a late start, I was only a few minutes late.

Since I did not step on the scale before I left, I have no idea what I weighed this morning. I did step on it once I returned, but I had already drank my two cups of coffee and some water, so it does count.

My lunch began with a salad of romaine w/almonds, avocado, celery, cheddar cheese, cucumber, & Ranch dressing. My leftover ribs were warming in the toaster oven and when they were warm, my husband served them to me because I was on the phone. I definitely love pork so finishing them off was another perfect meal for me.

I had eaten plenty for my lunch and I was not hungry when it came time for dinner. Since I really enjoyed my celery with cream cheese the other night, I decided to have it again for my dinner tonight. My husband wanted to watch a movie so I made my celery with cream cheese and sat down to watch it with him.

3.21.13, Low Carb Diet Journal

My weight dropped down to 129-1/2 lbs. This weight is now a quarter of a pound less than I have seen in over thirty years. Needless to say, I am pleased to see that it is still dropping.

I started my day with my two cups of coffee with cream. My husband and I were planning on having omelets for dinner last night but I was not hungry so we put them off until today. Since I only had celery with cream cheese for my dinner last night, I was hungry sooner than our usual time. My husband made us omelets for brunch. Mine included two eggs with a piece of bacon, spinach, and jack cheese. Jack cheese seems to be the perfect cheese for my omelets because there is so much flavor that I don't need ketchup. I devoured my omelet and I was full afterwards.

My husband made us barbecue pork ribs for our dinner. We had a half of a slab of baby back ribs that he seasoned with his recipe of Emeril's Blast. There was some spinach leftover from earlier in the day so instead of making a salad, we had it with our ribs. I grabbed some roasted almonds for my carbohydrate portion and was surprised that they tasted sweet to me. I ate plenty and my meal was superb since I love pork ribs.

3.20.13, Low Carb Diet Journal

My weight was 131 lbs. this morning.

I started my day with my two cups of coffee with cream. I am experiencing hot flashes since I started drinking coffee again, but I am enjoying it too much to give it up right now. If it becomes unbearable and I feel as if I must, I've done it before so I can do it again.

I made a couple of salads for lunch and mine included romaine lettuce, half of an avocado, celery, grated cheddar cheese, & Ranch dressing. My husband defrosted a couple of pork chops, seasoned them with salt and pepper, and then he fried them in bacon grease. I enjoyed my salad as well as my pork chop and when I finished them I could have stopped eating because I was satisfied, but I had one more cheesecake cupcake left so I ate it. It was really good and I will be making more of them as soon as I get more cream cheese since I don't have enough left to make them right now. As a matter of fact, I will be making my own version since I will be adding dark chocolate to them next time.

When it came time for dinner, I was not hungry. I waited awhile and then I decided to eat something instead of taking the chance of getting hungry later. I grabbed some celery, cleaned it and then I filled each one of them with cream cheese. I really like celery with cream cheese and I can't believe how filling it is!

3.19.13, Low Carb Diet Journal

My weight is up another half of a pound and I weighed 132 lbs. this morning. It does not really surprise me since I ate at an all you can eat buffet yesterday. I tried to eat as clean as I could, but I know that I ate more than I should have since I wanted to get my moneys worth.

I drank my two cups of coffee with cream while updating my menu from yesterday. I wanted more coffee but I chose to be a good girl and limited myself like I am supposed to. I spent my entire morning catching up with my computer work since I was waiting to hear from my mom and sister.

My husband made some bacon and since he makes it in the oven, it cooks for awhile and always smells terrific. When the first batch was ready and he offered me some, I chose to be a good girl again, and waited to eat until it was lunch time and I was hungry.

My husband made us some tilapia and I made us a salad for lunch. The tilapia was seasoned with his recipe of Emeril's Blast and he fried them in butter. My salad was made with romaine lettuce, avocado, celery, cheddar cheese, & Ranch dressing. I enjoyed my salad and when the fish was ready, I enjoyed it too. To complete my meal, I grabbed a homemade cream cheese cupcake and since there was only one more left, I thought about eating it too. Since I didn't really need it, although I wanted it, I chose to be a good girl once again and left it in the refrigerator for me to eat with my lunch tomorrow. 3.18.13, Low Carb Diet Journal

My weight popped up another one half pound and I weighed 131-1/2 lbs. this morning. My husband had the coffee made and my first cup poured so I enjoyed it while getting started with my work. I had my last load of laundry in the dryer so I started it in order to get the wrinkles out and then I folded it and put it away.

My husband helped me move the video cabinet into our bedroom and we left it by the wall until I get a chance to unload the CDs from their stand and into the cabinet. I straightened up my house and since I have been too busy to update my menus, I thought I should take the time and get them done.

The ear wash/medicine I made for my Shih Tzu seems to be working. I have been adding it to both of his ears on a daily basis and he is not shaking his head or scratching his ears like he used to. Needless to say, I am happy with the time that I spent doing my research.

I had a shrimp salad for my lunch. I started with romaine lettuce and then I added celery, cheddar cheese, and cucumber. I sauteed my shrimp in olive oil and poured it over the top. I then added Ranch dressing and devoured my salad. I grabbed a cheesecake cupcake and it was the perfect ending for me to complete my meal.

My mom and sister arrived at the casino yesterday and since my mom is on oxygen, she brings her scooter with her whenever she travels. The electric chair lift that is on her car was not working so my sister had to crank it by hand when they arrived. My husband looked at it on Saturday when we were at my folks house but he did not have the tools to fix it. Since we knew they were coming to town, we told her to bring it to the house and he would see if he could fix it then. My sister brought the car over, leaving our mom at the casino. 3.17.13, Low Carb Diet Journal

My weight popped up three quarters of a pound and I weighed 131 lbs. this morning. I have no doubt I will see the 120s again, but I am making choices that I want to make, and even when I don't my scale has a mind of its own, so I can not say when. Honestly, the only reason I feel that I even need to lose more weight is because I want to have a healthy hip to waist ratio.

I started my day off with two cups of coffee with cream. Instead of grabbing my computer, I started a load of laundry. I wanted to feed the chickens first thing so I filled up my chicken bucket with the stuff my mother-in-law sent for them and they were happy to get all the bread and crackers.

My son lives in the house next door, with a breezeway separating the two. Since he works days on the weekends, I try and get over there so I can help him keep it clean. I find that keeping it clean and orderly helps him to keep it that way, so it is working out for the both of us. My husband unloaded the toaster oven and video cabinet and placed the toaster oven on the counter and the video cabinet against a wall.

He took the other video cabinet and the rest of my things into my house so I could put them away when I returned. When it came time for lunch my husband made us some fresh tortilla chips. I ate my leftover chicken salad with some of the chips and when I finished, I grabbed a cheesecake cupcake. I can't believe how good they are and they are so easy to make. 3.16.13, Low Carb Diet Journal

I was up at 5:30 a.m., since I was going to be traveling to my folks house. My husband was going to drop me off at their house and then he was going to continue to the Bay Area to visit his mom. I drank both cups of my coffee with cream while getting ready to go. We were able to leave the house by 6:15 a.m., and when we went through town we saw people setting up for our annual festival called Dandelion days. Every year our town celebrates St. Patrick's Day by closing off part of Main Street for the vendors to set up. Since I did not go last year because it rained both days, the weather was going to be perfect this year so I wanted to go.

My husband and I arrived at my folks house and then he continued on his way. The reason I go so early is so my mom and I can go to garage sales. We were out of her house by 8 a.m., and the first sale we stopped at had baby clothes. Since I am shopping for an eleven month old, I hit the jackpot. The clothes were being sold for .25 cents a piece, and I ended up spending about $25 for clean, practically brand new, designer clothes. Needless to say, I was happy with that stop. It seems like every stop we made, I found something I could use. Between my mom and me, we filled up her car.

When we thought we were finished, we called my dad to meet us for lunch. We met at the restaurant and I ordered an omelet with jack cheese, mushrooms, & spinach, and some country potatoes with bell peppers & onions. I also ordered wheat toast because whenever my dad gets pancakes or waffles with his breakfast, he eats the toast with his eggs. I was hungry and my meal was excellent!
