4.02.13, Low Carb Diet Journal

I stayed the night at my folks house and started my day with two cups of black tea.

My mom and I resumed our work of putting her house back together. My sister arrived and she also got busy. We worked until it was almost lunch time and then we stopped long enough to go a couple of blocks for breakfast. I ordered linguica and eggs and I added ketchup to my eggs. Since we were at a Mexican restaurant, I also munched on chips and salsa. I grabbed a red sucker and ate it while we returned to the house.

My dad headed to the ranch, my mom headed to her Mah Jong game, and my sister and I continued with the work. We worked all afternoon and when my folks returned, it was time for dinner. Since we were only going to KFC, my sister decided to take her hour drive home before it got dark. My dad, mom, and I went to KFC and I ordered grilled chicken and coleslaw. I only needed one breast but I ended up eating two of them and the coleslaw.

When we returned, mom and I continued with the putting things away. We worked until 10 p.m., and since I was exhausted, I talked to my husband for a few minutes and then I went to bed.

4.01.13, Low Carb Diet Journal

I had a busy day ahead of me and I forgot to step on the scale.

I started my day with two cups of coffee with cream. I had some book work that I need to get done so I worked on it until it was finished.

Since I was going to my folks house, I hopped in the shower and then packed my bags. My husband warmed us up a couple of bowls of his homemade broccoli cheddar soup and I ate a bowl before we left.

My folks house was painted over the weekend so she needed some help putting things back. Because she needed my husband to hook the television,and dvd player up, he took me. We drove the two hours and when we arrived we got busy right away. We continued to work until my dad returned and then we went to dinner.

The restaurant we went to was closed so we followed them to another one. The second place was a taqueria and I ordered a carne asada tostada. This tostada was made with a corn tortilla, beans, cheese, guacamole, lettuce, sour cream, and tomatoes. I munched on tortilla chips and when my meal was finished I wanted an ice cream from Cold Stone Creamery. My husband and I traveled to the creamery and I had a small cup of chocolate dipped strawberry ice cream.

When we returned to my folks house, my husband said his goodbyes and left for home. I resumed with my work of putting things back and finally stopped at 10:30 p.m.

April, 2013 - CALP Low Carb Journal

This will be my daily journal for the month of April.

Last month I completed my fifth year of following CALP. Now that I am in my sixth year, I believe I have a few more pounds to lose but I am comfortable with the weight that I have reached.

I am still following a wheat and gluten free lifestyle and find it rather pleasant since I am having no problem finding alternative recipes for anything that I want. I prefer to cook, eat, and bake with whole foods and since I do not go out to restaurants that often, I am not consuming unhealthy fats or processed foods except when I do go out to eat.

I began drinking decaf coffee because I really like my morning coffee. The reason I switched to decaf is because the caffeine was causing my hot flashes to return and I was suffering because I was unwilling to give it up this time. I actually like my decaf coffee and I can not tell the difference since I add heavy whipping cream to every cup.

I will continue to eat as much fat as I want because it helps to fill me up and when I finish a meal, I no longer feel as if I want to eat more.

3.31.13, Low Carb Diet Journal

My weight was up a half of a pound and I weighed 131 lbs.

My day started with two cups of coffee with cream. I knew I was going to have a down day so I turned on my television and proceeded to watch the men's tennis final. I was disappointed when I got to the end because it ran over the time schedule and switched to another station. Unfortunately, I did not know that the station was going to run out of time and switch it to the Tennis Channel, causing me to miss the conclusion because I had paused it for various reasons and was behind.

We had a television series that we were curious about so we got started with the first episode. I wasn't sure it was going to be a show that I would want to watch but after I finished the first episode, I was hooked. This series was only one episode away from the conclusion of the third season so we had plenty to catch up with.

My husband marinaded some boneless pork chops in our Chinese barbecue marinade so he started the barbecue so he could grill them. I made us a salad of romaine lettuce and added avocado, celery, cheddar cheese, and ranch dressing to mine. When the pork chops were ready, I added a pork chop and tortilla chips to my plate, grabbed my bowl of salad and took them into the living room so we could resume our marathon.

I cleaned the kitchen and then I grabbed my chicken bucket and went out to feed my animals. I fed the chickens and collected 1 egg. I then went and fed my rabbits. I took the time to handle the babies, fed all the rabbits and returned to the house. I washed the egg, placed it into the refrigerator and resumed my marathon.

I decided to have another pork chop for dinner. We had some leftover asparagus so I added a spoon of mayonnaise to them and enjoyed my meal.

The rest of my evening was spent watching the television series and the only reason I stopped was because I kept falling asleep.

3.30.13, Low Carb Diet Journal

My weight was 130-1/2 lbs. so I am up 1/2 lb..

I started my day with my two cups of coffee and I added cream to both cups. I still haven't made it to the store to buy me decaf, so I am still suffering with my hot flashes because I am unwilling to give up my coffee again.

I returned to my storage room and proceeded to go through boxes. I had my sharpie out there and marked every single box so after they are all put away, I won't have to open them to see what is in them. I got all my Christmas bins organized, marked, and put away and then I worked on the rest of the stuff. My first break came when it was time for lunch.

We had some ham that was in the freezer so my husband defrosted it and made us some diced ham and scrambled eggs. We also had some leftover tortilla chips so I also ate them. I grabbed a brownie for my dessert and then I returned to resume my outside work since my husband cleaned the kitchen for me.

I grabbed the chicken bucket and fed the chickens. I collected six eggs and then I went to feed my rabbits. I gave them their pellets and then I set up a pellet feeder and hay feeder for the mom and babies. I filled up their pellet feeder and stuffed grass hay in the other one leaving them all munching away. I returned to the house, cleaned the eggs and then I put them in my refrigerator.

I returned to the storage room and proceeded to finish my cleaning and organizing. When I finished, I swept the floor and I was pleased with the results.

We still had some some broccoli and cheddar soup so that is what I wanted for dinner. My husband warmed us a couple of bowls while I hopped in the shower. My soup was delicious and since it was leftovers, the clean up was easy.

My back was feeling the efforts I had made so I spent the rest of my evening resting.

3.29.13, Low Carb Diet Journal

My weight dropped from yesterday and I weighed 130 lbs. this morning

I started my day with my two cups of coffee and I added cream to both cups.

Awhile ago, I began cleaning my storage room and I never did finish it. When I went searching for something in it, I could barely walk through so it was time for me to get it clean. The first thing I did was take everything out that was not on shelves and then I started cleaning off the shelves. I took my first break when my husband came and got me for lunch.

My husband made some chile verde, spanish rice, and some fresh tortilla chips. He also steamed some asparagus. Normally, I would skip the rice but it looked too good so I added some to my plate and then I added the chile verde over the top. I grabbed a few spears of asparagus and added a spoon of mayonnaise to them. I nibbled on tortilla chips and I really didn't need the coffee cake, but it really good so I ate a piece anyway.

My husband cleaned up the kitchen and I grabbed the chicken bucket so I could feed the animals before I resumed my cleaning and organizing. I fed the chickens and collected three eggs. I then went and fed my rabbits. Since I was expecting babies in a couple of days, I added the nest boxes to those cages. I returned to the house and cleaned the eggs. After placing them in the refrigerator, I returned to my storage room to continue with my work.

Not only did I clean the shelves, but I also removed the wasp nests that were on the walls and in some of the boxes. After doing that, I reorganized the shelves. Instead of putting the boxes back on the shelves I decided to go through each one of them and get rid of anything I no longer wanted. Because there were several boxes to go through, I worked all afternoon and still had more to do the following day. 3.28.13, Low Carb Diet Journal

My weight is the same as yesterday, 130-1/2 lbs.

I had my two cups of coffee with cream and then I cleaned up my computer by getting the recipes printed and organized. Looking at recipes early in the morning is not a good idea because it does make me hungry.

I made me shrimp salad for lunch. My salad was made with romaine lettuce, celery, cheddar cheese, cucumber, & ranch. I defrosted the shrimp and after I peeled it, I sauteed it in a pan of olive oil. When it was ready, I poured it over my salad. I completed my lunch by grabbing a couple of brownies.

I had a lazy afternoon and the only thing I did was take care of my animals. I collected four eggs from my chickens and then I fed the rabbits. I didn't bother messing with the babies because I worked on a couple of my automatic waterers to keep them from leaking anymore. When I finished, I returned to the house and washed the eggs.

My dinner was some chile verde and I also made me some celery that I stuffed with cream cheese. I cleaned the dishes and then I proceeded to have a lazy evening.

Thursday, 3.28.13

Breakfast: Coffee w/cream
Lunch: Shrimp salad of romaine w/avocado, celery, cheddar cheese, cucumber, & ranch, brownies

3.27.13, Low Carb Diet Journal

My weight stayed the same as yesterday, 130-1/2 lbs. I was not surprised or disappointed, so it appears that I am doing a much better job with the way that I am thinking about weight, at least today!

I started my morning with two cups of coffee with cream. My husband made a stop at Costco yesterday and I wish I would have come to my senses about giving up my beloved coffee again sooner. If I would have made the decision one day earlier, I would have had him pick some decaf coffee. On second thought, I may not even like decaf coffee so picking up a smaller bag at one of my local stores is probably a better choice.

Instead of getting started with one of my exercises, my morning disappeared because I was doing some on-line shopping. I found the items I was looking for and placed them in my shopping cart but when it came time to check out, I had second thoughts. I ended up leaving the items in my shopping cart in case I change my mind again, but I closed the website so I would not be tempted.

My lunch was some of the leftover chicken in mushroom cream sauce. My husband had the rest of it so we have no more. Instead of making me a salad, I grabbed some celery. Once I finished my celery, I cut me some coffee cake and enjoyed every single bite. As a matter of fact, I enjoyed it so much I even went back for more. I removed the cover and then I changed my mind and put the cover right back on it, putting my saucer and fork into the dishpan of soapy water.

I collected four eggs from my chickens and I will see if I have anymore tomorrow. My rabbits are doing great. The little guys are still adorable and one of them is already tame enough to come to the front of the cage and see me.

Dinner was leftover broccoli and cheddar cheese soup. I enjoyed every single bite and finished it off.

3.26.13, Low Carb Diet Journal

My scale was back up to 130-1/2 lbs. this morning. It was not unexpected since my dinner was heavier than I needed. I wanted the London broil and I also wanted the soup, it was just that I did not need both of them. Since it is obvious that my daily weight fluctuations are normal, I will see what tomorrow brings.

I drank both cups of my coffee with cream. Once I finished them, I started drinking my water. I have been struggling with hot flashes since I resumed drinking coffee, and they seem to be getting worse. My hot flashes were the reason I gave it up before, so in order to eliminate them again, I will either have to give it up or change to decaf.

I made me a shrimp salad for my lunch. I started with romaine lettuce and added avocado, celery, cheddar cheese, cucumber, & ranch dressing to it. I defrosted the shrimp, peeled off the shells, and added them to a pan of olive oil so I could saute them and add them to my salad. Once my salad was gone, I cut me a piece of coffee cake and really enjoyed my meal. I cleaned my kitchen and then I went out to feed my animals.

My husband makes popcorn on a regular basis and once in awhile he has some leftover that he dumps into the chicken bucket. Whenever they have a chance to get popcorn they totally ignore the rest of their food and eat it first. It is entertaining to watch because they grab a piece and take off running. I collected two eggs and then I went to feed the rabbits.

My rabbits are all doing well. I handled the babies again today and it won't be long before they stop hopping away from me. After feeding all of them, I returned to the house and cleaned the eggs before placing them in the refrigerator.

We had leftover broccoli and cheddar cheese soup for our dinner. This soup is really good and it is becoming a favorite of mine. Not only is it delicious, but it is nice and filling.

3.25.13, Low Carb Diet Journal

I was happy to see that my weight remained the same as it was the first time that I weighed myself yesterday, 129-1/2 lbs. It would have been nicer if I would have seen it hit the same number as my second weigh in, but I am used to it popping up and down and I know that it is only a matter of time before it goes back down!

I was able to sleep in until 6:30 a.m., getting plenty of sleep last night. My morning began with my two cups of coffee with cream. I began working on a blog post last night and after catching up with my emails, I resumed my work. This particular post included some mathematical figures and it took me awhile to figure them out as well as get it written.

I found a recipe for sweet and sour soup on Google+ that sounded good so my husband stopped on his motorcycle ride home yesterday and picked up the few ingredients that we needed. He made it for our lunch and he made it with pork, Bragg's liquid aminos, sherry, tapioca flour, white vinegar, red wine vinegar, balsamic vinegar, salt, honey, white pepper, sesame oil, coconut oil, ginger root, shiitake mushrooms, bamboo shoots, chicken stock, eggs, & green onions. This soup was delicious! I couldn't think of a better way to complete my meal than to cut me a piece of my homemade coffee cake, which was also delicious!
