4.18.13, Low Carb Diet Journal

I started my day with three cups of decaf coffee with cream.

We were going to have pork ribs marinated with my husbands recipe of Emeril's blast for lunch so my husband got the barbecue started first thing in the morning. As the ribs were cooking we got a call from my mom asking my husband to replace the belt on her washing machine.

Since we had to travel, he finished cooking the ribs and placed them in the refrigerator for later. We got ready and went to pick up the belt. The belt was located in a city between our house and my folks, so we planned on going to a fast food Mexican restaurant that my husband enjoys. When we got there we discovered that they were closed for remodeling so we went to an all you can eat Indian restaurant that we have had in the past.

Since all the dishes that I eat are in sauces, I fixed my plate without any knowledge of what was in them. I skipped the rice but I did have some vegetable pakora which is battered and deep fried. The other vegetables I ate included a cauliflower dish as well as a spinach dish. The chicken I ate was the butter chicken and I also grabbed a small amount of curry chicken. I was surprised to see a breast in the tandoori chicken so I grabbed it and took a few bites before giving the rest to my husband. I could not resist the naan bread and I used it to clean the sauces off my plate. So I did include wheat in my diet knowing full well that I was going to have it even before I got to the restaurant.

We arrived at my folks house and I helped my husband replace the belt. Since my mom had an appointment she was not there so we left as soon as we were done. We did make one stop at Costco to fill up the car with gas and we also went inside to pick up some more cream and lettuce, among other things. Click here to continue reading, or leave a comment »

I started my day with three cups of decaf coffee and I added cream to all of them.

I had another shrimp salad for lunch. I cleaned and cut up my romaine lettuce and then I added my homemade miso salad dressing to it. I then added my celery and cucumber. I had already defrosted the shrimp so I peeled fourteen and dried them before adding them to a hot pan of a tablespoon of olive oil. While they were cooking, I cut and sliced a small avocado which I placed on top of my vegetables. When the shrimp were ready, I added them to the top of my salad. I have found that adding my salad dressing to my lettuce helps to save me from adding more dressing than I need. I completed my lunch with a homemade cheesecake cupcake.

Even though I now consider myself in maintenance, I am still hung up on my weight. I step on the scale every day hoping to see a lower number so reading posts like these help me deal with reality. At 53 years old, I will never see the body that I envisioned as a young adult, but to be perfectly honest, I am thrilled with the way that I look now. My body composition results should be enough to satisfy me and if my waist to hip ratio was in the normal range, I would feel a lot better. I honestly believe that my diet is perfect for me so I know that all I have to do is begin a regular exercise program and, in time, I will reach that normal range.

Dinner was another bowl of our homemade broccoli cheddar soup. I still can't believe how good this soup is but it has become an excellent addition to my diet!

4.10.13, Low Carb Diet Journal

My day started with a cup of coffee with cream. I picked up my computer and began catching up with my emails and I also updated my menu. While spending time on my computer I ended up drinking all four cups of coffee that was in the pot. I added cream to each one of them and I am happy that I can't tell the difference between regular and decaf coffee because decaf tastes just fine with me.

I am still experiencing hot flashes but I hope that my coffee change will cause them to go away soon. I think it took me a couple of weeks after resuming regular coffee for them to begin hitting me again so I hope they will go away in the same time frame.

I was expecting kits, also known as rabbit babies, and when I went out to the barn to check, one doe had just finished delivering seven. They all looked nice and healthy so I left her alone so she could cover them with fur.

I had to go to town for a few things so I made me some homemade vinaigrette dressing to add to my salad for lunch. My lunch was a large shrimp salad and I also made a small salad for my husband. I defrosted some shrimp and added romaine lettuce, avocado, bacon, celery, cucumber, and homemade vinagrette dressing to a plate. I cleaned the shrimp and added them to a pan so I could saute them in olive oil. When they were ready, I added them to the top of my salad. My salad was delicious and when I finished, I grabbed a homemade cheesecake cupcake from the refrigerator and thoroughly enjoyed it.

After lunch, I left the dishes to soak and took care of my animals. I grabbed the scrap bucket and added some laying crumble to it before feeding the chickens. I collected six eggs and then I went into the barn to check for more kits. There were no other litters and the one from earlier was nice and warm tucked in fur. My morning started with my first cup of decaf coffee with cream. I woke up at my usual time, 6:30 a.m., and picked up my computer so I could catch up with my emails and update my menus. Now that I am drinking decaf coffee, my husband makes me half of a pot everyday. Since a half of a pot equals three cups, I am drinking all three of them with cream. Since CALP limits the amount of cream I am supposed to drink in my morning coffee, I have always added it to the two cups I used to drink so I have always bent that rule.

I was able to get caught up with reading my emails and I also got my menus updated. Since I was unable to get much done on my house, I got up so I could get it back in order.

Unfortunately, I did not get much done but I did manage to clean a few things. I have been wanting to make some cheesecake cupcakes so I got out the ingredients and proceeded to make them. My husband ended up injuring his foot so I helped him with what he needed and finished my cupcakes. I needed to taste the batter to make sure I added enough coconut sugar so I had to make my lunch so I could consume it within the hour.

While my husband was soaking his foot, I made us lunch. I started with our salads and added romaine lettuce, avocado, bacon, celery, cheddar cheese, cucumber, & ranch dressing to mine. I also warmed up some leftover Mexican steak for me and he had a leftover pork chop which he warmed up himself. I removed the cupcakes from the oven and placed them on a rack to cool. I woke up early even though I was still behind in my sleep. Instead of laying in bed and trying to go back to sleep I got up and had my morning coffee. I drank three cups of decaf and added cream to all of them. Since I am drinking decaf coffee, I knew I could nap whenever I felt the need because it would not keep me awake.

I turned on the television and watched a movie hoping I would fall asleep, but it was not to be. It was late morning and I was hungry so I made me an early lunch. I was going to have breakfast with potatoes but then I decided I did not want to wait so I made me a shrimp salad. My salad included romaine lettuce, avocado, bacon, celery, cheddar cheese, cucumber, shrimp, & ranch. I snacked on a few tortilla chips and completed my lunch by finishing off my homemade brownies.

I went out to feed my animals. After feeding the chickens I collected three eggs. My rabbits are all doing great. I fed all of them and gave the youngsters their grass hay. I don't expect any babies until Wednesday but some of the girls have already pulled a bit of fur for their nests.

When I returned to the house I cleaned the eggs and put them in the refrigerator. I cleaned the kitchen and returned to the living room hoping to catch up with some of my reading. When I could not keep my eyes open any longer, I took a nap. I kept waking up and then I would fall back asleep so when I finally did get up, I was groggy.

Since I had an early lunch, I was ready to eat earlier than usual. My husband defrosted some chicken breasts. He fried them in bacon grease topping them off with mozzarella cheese. He also steamed us some asparagus and I added mayonnaise to mine.

After dinner, I was not hungry but I did not feel satisfied. My husband made me a couple more cups of decaf coffee and I added cream to both of them. When I finished my coffee, I was satisfied. Click here to continue reading, or leave a comment »

I was up early since I had my granddaughter overnight again. We both managed to get a little more sleep than the night before, but not enough. I will have her until my son gets off work this evening but at least the days are much better than the nights.

I drank three cups of decaf coffee and added cream to all of them. I managed to get my laundry done but that was all the house work I did. Instead of doing anything else, I played with the baby and took a short nap during one of hers.

I made a couple of salads for lunch and mine included romaine lettuce, avocado, bacon, celery, cheddar cheese, and ranch dressing. My husband warmed up the short ribs and I ate them with my salad before grabbing some of my homemade wheat and gluten free brownies for my dessert.

I had to put some nest boxes in some of my rabbit cages so when the baby was napping my husband watched her while I got my chores done. I fed the chickens and collected a dozen eggs. I added the nest boxes to the cages that needed them and fed all the rabbits. The youngsters are getting big and I will begin separating them from their mom this weekend since they will be six weeks old.

The baby was still asleep when I returned to the house so I cleaned the eggs and put them in the refrigerator. I washed our lunch dishes and when I returned to the living room I picked up my computer so I could update my website.

My husband defrosted some pork chops for our dinner. He seasoned them with salt and pepper and then fried them in a pan of bacon grease. He also made some more cheesy cauliflower bread sticks and I thought they were better than the first time I ate them because they were not as salty because he did not add the garlic salt. 4.06.13, Low Carb Diet Journal

My weight dropped one quarter of a pound and I weighed 131 lbs. I am still two pounds away from my lowest weight and I believe I will reach it again at some point.

I had my granddaughter last night and did not get much sleep. When I woke up after my two hours of sleep, I drank three cups of my decaf coffee and they all included cream. Since they were decaf, I knew it would not keep me up if I were to get a nap later in the day.

My husband made the baby some scrambled eggs and also made some linguica that he had defrosted. The smell of the linguica was enough to convince me to want breakfast so he made me an omelet with Jack cheese to go along with the linguica.

I was tired and the only thing I did was to take care of the baby. When she went down for a nap, so did I. I did not get to sleep very long and because of my lack of sleep, I smacked my forehead on our wooden key holder which left a nice big lump.

The rest of my day was the same as the beginning except I did not get hurt again. I fed the baby her lunch and when she went down for her nap, so did I. I didn't even have the energy to feed the animals so my husband took care of them for me.

For our dinner I made a couple of salads and mine included romaine lettuce, avocado, celery, cheddar cheese, cucumber, & ranch dressing. While I was away at my folks house my husband made some Mexican steak so I had it with some rice. My husband made us some cheesey garlic cauliflower bread sticks and I had a couple of pieces of them too.

The baby was picked up by my son and taken next door for a few hours so I grabbed my pillow and went to sleep on the couch. When she came back she was sleeping so I got a couple more hours of sleep before she woke me again around midnight.

4.05.13, Low Carb Diet Journal

My weight was 131-1/4 lbs. this morning. It is crazy to lose 1-3/4 lbs. overnight but it is understandable when I eat out for three days.

My entire day was spent doing absolutely nothing. I attempted to go through my emails and updated my menus.

I made a couple of salads for our lunch and mine included romaine lettuce, avocado, celery, cheddar cheese, cucumber, & ranch dressing. My husband warmed me up some ginger beef he made while I was gone and I also munched on homemade tortilla chips that my husband warmed in the toaster oven.

While we ate our lunches, we continued to catch up with the three years of the new television series that we started.

Dinner was a leftover pork chop that my husband grilled while I was away. He also steamed some asparagus and I added some mayonnaise to mine.

I planned on watching television the rest of the evening but I ended up with my granddaughter. I played with her until she finally went to sleep and then I did too.

4.04.13, Low Carb Diet Journal

My weight was 133 lbs. this morning. I hope it was because of eating out for three days and it will go right back down as soon as I resume my normal eating.

My husband picked me up some decaf coffee so I had two cups this morning with cream. I was pleasantly surprised because I could not tell the difference. I had already experienced some of my caffeine withdrawal at my folks house so it should be going away soon. Hopefully by next week I will have all the caffeine out of my system and my hot flashes will go away again.

I spent quite a few hours catching up with my menus and I am really happy that I write down what I eat each day because it had been an entire week since I had updated my website. I was very tired and I had absolutely no energy so I lazed around all morning.

My husband made us a new short ribs recipe. He made it in the crock pot the day before and started it again this morning. The one good thing about him doing that was he scraped all the fat off the top before placing it back into the crock pot. I made us each a salad and added romaine lettuce, avocado, celery, cheddar cheese, and ranch dressing to mine. I had my bowl of salad and the short ribs were placed on a plate. When I was done I grabbed a couple of brownies to complete my meal.

While eating our lunch, my husband and I began to watch the series that we started before I left to go to my folks house. When we finished our lunch, I washed the dishes while he put the food away. 4.03.13, Low Carb Diet Journal

I stayed the night at my folks house and when I woke up I started my day with two cups of black tea.

I was expecting my husband to pick me up in the afternoon so mom and I got started with putting the rest of the house together. We worked all morning and when it was time for lunch, we stopped long enough to go to the Mexican restaurant. I ordered linguica and eggs and added a couple of drops of ketchup to them. I also munched on tortilla chips and salsa. When we finished, I grabbed a green sucker and ate it on our trip back.

We resumed our work and when my husband arrived, we had him help us with a few more things. It took us a couple of hours but when we got ready to leave, it was all done! We made a stop at our daughter's house to deliver a few items and then we traveled home.

When we arrived in town, we stopped at the grocery store for some fresh vegetables and then we went home. My husband unloaded the car while I grabbed the chicken bucket to go out and feed my animals. I had a lot of snacks that I brought home from my folks house so the chickens had a feast. I collected all the eggs since my husband forgot, and cracked all of them for the chickens to eat since I did not know which ones were fresh. I then went to my rabbit barn to see if any of them had any babies. I was only expecting two of them to have babies and neither one of them had any. I fed the rabbits their pellets and gave some grass hay to the youngsters.

When I returned to the house my husband had a pork chop warming in the toaster oven. I made me a salad of romaine with celery, cucumber, and ranch dressing. My pork chop was ready the same time as my salad so I sat down and enjoyed my meal. I was too tired to do the dishes so I left them soak until morning.
