I weighed 142 lbs. this morning.

I started my day with three cups of decaf coffee that I enjoyed with cream.

Lunch was a chicken breast that was seasoned with salt, pepper, garlic, paprika, and turmeric and fried in coconut oil. My husband added some cabbage and stir fried it along with the chicken. He also made us a cabbage salad and the cabbage tasted delicious prepared both ways. I completed this meal with some of my delicious homemade dark chocolate almond bark.

Since I finally went to the grocery store and bought some fresh vegetables, I was able to make us salads with our dinner. My salad included romaine lettuce, a stalk of celery, a portion of a homegrown cucumber, and some of our homemade raspberry vinaigrette. I picked up some New York steaks and my husband seasoned them with salt, pepper, garlic, and paprika. He cooked them on the barbecue and along with my salad, it was the perfect meal to end my eating for the day.

I forgot to step on the scale this morning so I still don't know how much I weigh. Actually, I am thinking I don't want to know!

I started my day with two cups of decaf coffee with cream, which turned into three cups, which turned into the whole pot. The only reason I have a problem with drinking that amount of my decaf coffee is because it still contains caffeine and when I drink too much of it, my hot flashes return.

Lunch was two pieces of tilapia that were seasoned with my husband's recipe of Emeril's Blast and fried it in a pan of coconut oil. He made us a cabbage salad with homemade mayonnaise, lemon, salt, and pepper and I enjoyed a hefty helping of the cabbage salad with my fish. I made some of my homemade dark chocolate almond bark but I put it in the refrigerator instead of the freezer and it was not ready when I was. Instead of waiting I grabbed an apple and discovered it did not taste good. Instead of eating it I decided to have some almonds so I grabbed a handful and my meal was complete once I finished them.

I was hungry earlier than usual so my husband made me some of his home cured bacon. This was the first time he ever cured bacon and this batch is salty. I knew it was salty and to be honest, that is why I wanted some. He fried a few slices in a cast iron pan and when they were ready I grabbed the whole plate and ate about three or four slices. Since I was planning on making this meal my second meal of the day I went into the refrigerator and grabbed some of the leftover cauliflower. I heated it up and enjoyed my meal of bacon and cauliflower.

We still have guests so I did not bother weighing myself since my scale is located in the guest bathroom.

I started my day with my decaf coffee and ended up drinking three cups with cream.

Lunch was not planned since everyone was busy trying to locate an alternator so when I got hungry I went into the refrigerator and grabbed a piece of bacon. It was not cooked enough and tasted too fatty for me so I grabbed the half of uncooked linguica and cooked it. My lunch was linguica and celery while everyone else had hot dogs on buns.

We took a two hour round trip to pick up the alternator and after my husband and son-in-law installed it, the kids were ready to go home. They left around 5:30 p.m., and then we had to figure out what we were having for dinner. We had some leftover cross rib roast and a head of cabbage in the refrigerator so my husband reheated the roast and made us a cabbage salad. The cabbage salad was made with homemade mayonnaise, lemon, salt, and pepper.

9.02.13, Low Carb Diet Journal

We still have guests so I did not bother weighing myself since my scale is located in the guest bathroom. To be honest, I ate so much yesterday I would have wanted to avoid it today anyway.

I enjoyed my two cups of decaf coffee with cream this morning.

The kids are leaving so instead of eggs again, my husband made us a cross rib roast for lunch. I made each of us a salad and mine included some avocado, celery, some of our homegrown cucumber, and raspberry vinaigrette dressing. I fixed my plate with a slice of cross rib roast and it tasted so good I had another. Since I did not have anymore dark chocolate almond bark, I made some no bake cookies. I ended up eating one but it was not what I wanted so I did not have anymore.

The kids got ready to go after lunch and they left here around 12:30 p.m. At 1 p.m., I got a phone call telling me that they were in the Walmart parking lot and they had broken down. Before they left we heard a funny sound but it went away after the car warmed up. My husband and I went to help them and my husband got the car running well enough for my daughter and I to take it home. The guys were going to a car parts store and would be following the same route we took in case we broke down. As it turned out, my daughter and I made it home.

Since it is Labor Day and an alternator could not be ordered from the warehouse until the following day, the kids unpacked their car and stayed another night.

9.01.13, Low Carb Diet Journal

We have guests so I did not bother weighing myself since my scale is located in the guest bathroom.

I enjoyed my two cups of decaf coffee with cream and could not resist a third cup with cream.

My husband cooked some bacon, linguica, and potatoes and when they were ready, I cooked the eggs. I fixed my plate with two eggs, bacon, linguica, and potatoes and added ketchup to my eggs and potatoes. When I finished my meal I still wanted some of my homemade dark chocolate almond bark and ate more carbohydrates than I would have liked.

I really wanted to get the downstairs finished so it would be done. When everyone was busy, I went downstairs to try and finish up. My daughter comes downstairs and sees me putting things away so she went back upstairs and came back with some furniture polish and a dusting cloth. The next thing I know her husband is asking me for my Webster so he could take down the spider webs. When we all finished, the game room was not only organized but it was clean!

Our pool table was not handled properly when it was stored because of our downstairs being flooded three years ago. Since my husband would not use it unless it was fixed, our daughter and son-in-law helped him repair it. They did a really good job and when it came time to put the felt back, they needed my help. The pool table is back to being smooth and now we are able to use it again.

My husband seasoned a tri tip and placed it on the barbecue for our dinner. I made each of us a salad and mine included romaine lettuce, celery, some of our homegrown cucumber, and our homemade raspberry vinaigrette dressing. I fixed my plate with tri tip and enjoyed my meal. The tri tip was so good that I ate more than I should have and when I got up to put my plate in the sink I discovered part of a cooked hot dog which I could not resist.

After the dishes were all done, thanks to my son-in-law and daughter, we all went downstairs and had a good time playing pool. Click here to continue reading, or leave a comment »

8.31.13, Low Carb Diet Journal

My weight was 140 lbs., this morning and this will be the last time that I will be weighing myself until after the kids go home. My scale is located in the guest bathroom so instead of walking in there every morning and invading their space, I am going to wait until after they leave.

The kids spent the night at my folks house and they were going garage sale shopping with my mom this morning so I don't expect them until later this afternoon. Instead of organizing I got started with the guestroom and guest bathroom. I have a daybed with a trundle so I stripped and washed the bedding, and remade both beds so they would have fresh bedding. I dusted the furniture and vacuumed the carpets and the guestroom was ready. The bathroom was easy since I keep it up on a regular basis but it still takes time to clean everything. When it comes to my bathrooms, I still get down on my knees and clean the floor boards as well as the floors.

Lunch was cod that was seasoned with my husbands recipe of Emeril's Blast and fried in a pan of coconut oil. I fixed my plate with a couple of stalks of celery and a piece of cod and completed my meal with some of my homemade dark chocolate almond bark. I ate more bark than I should have but it tasted so good, I had a hard time stopping.

I cleaned the dishes and my house was in order so I began with my organizing again. Whenever I clean I make messes and a lot of my mess ended up in my bedroom. Since every room in the upstairs portion of my house was done I decided to get my bedroom done instead of finishing the game room downstairs. The time was well spent because I got it all done before they arrived. I did not get a chance to dust or vacuum my bedroom but everything else that was upstairs was done. 8.30.13, Low Carb Diet Journal

My weight was 140-1/2 lbs.

I enjoyed my three cups of decaf coffee this morning and I added cream to each cup.

I have been making huge progress with my house organizing and since I am expecting my daughter and her husband to come and visit this weekend, I spent every moment I could to get it completed.

Lunch was tilapia seasoned with my husbands recipe of Emeril's Blast. I enjoyed two pieces with two stalks of celery and completed my meal with my homemade dark chocolate almond bark.

Dinner was a chicken breast seasoned with salt, pepper, garlic, and turmeric which was fried in coconut oil. I also enjoyed two stalks of celery that I rinsed and cleaned.

I was unable to get everything done so tomorrow when I awake, I will see how much I can get done before they arrive.

8.29.13, Low Carb Diet Journal

I can't believe my weight jumped up a pound and a half to 141-1/2 lbs. this morning. I hope it is a temporary blip but it really doesn't matter since I am happy with the way I am following my plan.

I didn't get any of my organizing done this morning and my morning disappeared anyway. I have a couple more days to get things done and I hope to get some of it done later on.

Lunch was a leftover chicken breast, a stalk and a half of celery, and about eight of our homegrown grape tomatoes. My meal was good but I wanted some of my homemade dark chocolate almond bark so I made a bath. Once it was ready, I stuck it in the freezer hoping it would be frozen by the time I finished the dishes. When I cut into it, I was able to get some of the hardened part and took a spoon to get the corners that were not quite as firm. Let me just say that it doesn't matter whether this recipe of dark chocolate almond bark is hard or not, it was very good!

I am trying to get into the habit of feeding my animals around noon and it seems to be working out well. My barn is full of rabbits so I hope to be getting rid of some of them soon.

I intended on getting some of my organizing done but my afternoon disappeared just like my morning. I went out to check on the vegetables and found a cucumber that my husband missed when he picked the grape tomatoes earlier.

Dinner was my last leftover chicken breast and when I cut open the cucumber, it was bitter. I don't know if I am waiting too long to pick them but I won't eat them when they are bitter and I give them to my chickens. I then grabbed three stalks of celery and cleaned them eating one and a half to go along with my chicken breast.

Since I couldn't let the day go by without getting some organizing done, I went downstairs after dinner and worked for a couple of hours.

8.28.13, Low Carb Diet Journal

My weight dropped another quarter of a pound and I weighed 140 lbs. this morning.

Today I had leftover coffee from yesterday and my caraffe included three cups. I drank all three of them with cream and look forward to tomorrow when I can have more.

Organizing continues and I got a lot done upstairs, getting everything that I wanted placed downstairs. I am going to like the end result, whenever that will be.

Lunch was some of my husbands homemade broccoli cheddar soup, two pieces of leftover tilapia, and two pieces of our homemade cranberry nut bread. My appetite was well taken care of and I am happy I found the cranberry nut bread that was in the freezer.

My husband defrosted a whole chicken that he seasoned and placed on the barbecue. I informed him that I wanted to make my half of the chicken to last me three meals. I only eat white meat so that leaves me with two breasts and two wings. Instead of eating a breast and wing combo, I asked my husband to either serve me two wings or the remaining two breasts, one at a time. We had some leftover cauliflower and he made us some more of that to go with our chicken. I fixed my plate with two chicken wings and three slices of cauliflower bread.

8.27.13, Low Carb Diet Journal

My weight is down a quarter of a pound, 140-1/4 lbs. I noticed that I began this month at 140-1/2 lbs., so it is nice to be hovering around the same weight.

I only had one cup of my decaf coffee left in my coffee pot/decanter so I warmed it up while I made me another pot. I added the cream to my first cup and enjoyed it until my next cup was ready. I should have stopped at two but it tasted so good, I caved and had one more. I stopped after my third and all three cups of my decaf coffee included cream.

I cleaned out the back room, which also accumulated baby things, and took everything downstairs. I kept all the baby clothes upstairs and sorted them by size before placing them in boxes. If the new baby turns out to be a girl we have enough clothes to fill up her drawers and plenty of dresses to put in her closet. If we end up having a boy my future will include baby boy clothes shopping.

Lunch was leftover meatloaf. These muffin sized meatloaves were made yesterday and they were made with bacon, ground beef, egg, and spices. They were a little dry so my husband defrosted some of our homemade bone broth and made us a glaze. He also cooked us some of our homegrown zucchini by slicing it up and frying it in coconut oil before sprinkling some dill and garlic over the top. My meal included two and a half muffin sized meatloaves, a quarter of a zucchini, and I grabbed a small apple, which was filling.

My back was hurting so after taking everything downstairs, I needed to sit down and give it some support. My husband had defrosted four pieces of tilapia for our dinner. He fried all four of them in butter and when they were ready I had him place one of them on a plate for me. Instead of eating a second one, I cleaned and stuffed three pieces of celery with cream cheese and enjoyed them.
