9.15.13, Low Carb Diet Journal

My weight dropped a quarter of a pound and I weighed 141-3/4 lbs. this morning. Because of all the cookies I ate yesterday I did not expect to see a loss, but I'll take it!

My back is still sore but it seems to be getting better each and every day. I am still resting, doing as little as possible, and I am not hunching over anymore when I get up to walk to the bathroom.

I enjoyed two and a half cups of decaf coffee with cream this morning. I would have had more if there was any. Since I am trying not to drink too much, I did not have my husband make me another pot. As soon as I finished my coffee, I began drinking my water for the day.

My husband defrosted a couple of pork chops for our lunch. I was going to make us each a salad but we still had some broccoli leftover so we decided to eat it. My husband seasoned our pork chops with salt and pepper and fried them in a cast iron pan of bacon grease. He also warmed up the broccoli and after adding my portion to a small bowl, he poured melted butter over it. I enjoyed my meal of a pork chop and broccoli and instead of eating more of my homemade oatmeal craisin cookies, my husband defrosted the last piece of homemade cranberry nut bread that I made with coconut flour. He defrosted it and then toasted it before smearing it with butter and serving it to me. My meal was simple, but superb!

When it came time for dinner, I was feeling a bit hungry. Instead of eating another meal and possibly overeating because my hunger always seems to get worse when I begin, I asked my husband to make me a fresh pot of decaf coffee. I enjoyed three cups with cream and it took care of the hunger I was experiencing. As long as I am not hungry, I do well!

9.14.13, Low Carb Diet Journal

My weight is the same as yesterday, 142 lbs.

I enjoyed two and a half cups of decaf coffee with cream. My husband offered to make me another pot but I made the choice to stop because I knew I would drink too much if he made me a fresh pot. He still drinks his coffee with caffeine so we each have our own caraffe.

My back is getting better although it still hurts. It seems like it is getting a little better each day so I am hoping the pain will be gone in a couple more.

We had company coming over in the afternoon so I decided to make my own recipe of oatmeal craisin cookies. My husband helped me by gathering most of the ingredients so all I had to do was to put the proper measurements into the mixer and get the cookies ready to bake. After the first batch was out I delivered some next door since my son's girlfriend had some friends over. My husband was kind enough to clean up the kitchen for me and then he made us both lunch.

Lunch was leftover stuffed zucchini. My husband warmed us each a zucchini boat and served mine to me. When I finished mine, I should have gone into the freezer and took out the last piece of our homemade cranberry nut bread and buttered it all up, but I wanted to try the cookies I had baked. I was not even thinking about me making them with flour and the first one tasted so good it lead to another, then another, and then another. They were fantastic when I was eating them and I had a hard time stopping. After eating my meal and all the cookies, my stomach felt bloated and that is what reminded me of the flour that was in the cookies.

I was getting a little hungry around dinner time so I asked my husband to make me another pot of decaf coffee. I enjoyed three cups with cream and I was satisfied because they took care of my hunger.

9.13.13, Low Carb Diet Journal

My back is still hurting but it seems to be getting better even though I am still experiencing pain. My body is not ready for anything other than rest today so I will be taking it easy again today.

When I stepped on my scale this morning I was pleased to see that my weight had dropped two pounds to 142 lbs. My food balance was a whole lot better yesterday and since I am not making anymore dark chocolate almond bark for awhile, I should have no problem keeping my meals balanced from now on.

I made a whole pot of decaf coffee and except for the small amount my husband accidentally poured into his cup, I drank it all. I enjoyed four and a half cups with cream.

My husband made his family recipe of spaghetti sauce yesterday and he made our own recipe of stuffed zucchini for our lunch today. He scooped two of our homegrown zucchinis into four boats and filled them with his spaghetti sauce recipe. It was made with ground beef, pork sausage, onions, & tomatoes and topped with mozzarella and parmesan cheese. It was just as good as I thought it would be and I thoroughly enjoyed it. For my carbohydrate my husband went into the freezer and took out one slice of our homemade cranberry nut bread. He defrosted it and then he popped it into the toaster. Once it was ready he smeared butter all over it and brought it to me. It was the perfect ending to a perfect meal and I enjoyed every bit of my lunch today.

When it came time for dinner, I was not hungry. My husband did not want any dinner either and if he did want something to eat he would have no problem snacking on popcorn or cheese crisps.

9.12.13, Low Carb Diet Journal

My weight is up a half a pound, 144 lbs., so that tells me that I can not overeat carbohydrates if I want to lose weight, even if I do limit my meals to once a day. I have always known that I do best when I balance my meals so I will try and make better choices when I go out to restaurants.

My back is still hurting, although it is better than yesterday. I made me a full pot of decaf coffee and drank the entire pot with cream. I decided I was not going to do anything today except laze around since standing up straight and walking is still rather difficult for me.

I had leftover tri tip and fresh steamed broccoli for my lunch. My husband warmed me up a chunk of tri tip after he warmed up a half of leftover chicken for him. He placed the tri tip on a saucer and after steaming the broccoli, he placed it in a bowl before adding butter to it. I enjoyed my meal and once I finished my protein and vegetables, I went into the freezer and grabbed a slice of homemade cranberry bread that I made with coconut flour. My husband placed it into the toaster and when it was ready he smothered butter all over it before serving it to me. It was delicious and I was completely satisfied with my meal.

After lunch I decided to do some stretching. Callanetics is the perfect exercise for stretching so I completed half of the workout since it takes an hour to get the entire workout done.

Since I was still not feeling well, I ended up taking a nap. My husband offered to fill the bath with water so I could soak in the jacuzzi tub but I told him that I needed to shut my eyes for a few minutes. My nap lasted two hours and when I woke up I was still in pain. My husband fed the animals and I spent the rest of my evening doing as little as possible.

9.11.13, Low Carb Diet Journal

Sleep was not good last night since my back hurt every time I moved. I did the best I could and ended up getting up at 5:30 a.m. My husband and I were going to my folks house because he was going to repair the roof on the ranch house and my mom had some things she needed me to do for her.

I stepped on the scale and found that my weight is the same as yesterday, 143-1/2 lbs.

I got ready while drinking my two cups of decaf coffee with cream. We left our house and stopped at the hardware store so we could pick up the items that my husband needed to repair the roof. My back was hurting so I stayed in the car until I had to go to the bathroom. As I was walking out of the bathroom I found my husband at the check out counter so we returned to the car and proceeded to our destination.

We arrived at the ranch around 9 a.m., and my dad was already there. The job that my husband said was only going to take about twenty minutes ended up taking two hours. When he finished, we met my dad at his house so we could pick up my mom and go out for breakfast/lunch. My dad wanted to leave the restaurant and return to the ranch so my husband, mom, and I took her car to the restaurant and my dad followed us in his truck.

We went to a Mexican restaurant and I ordered a carne asada taco salad. It came in a fried flour tortilla with beans, cheese, lettuce, guacamole, pico de gallo, rice, and sour cream. While I was waiting for my meal, I enjoyed the corn tortilla chips with salsa. I also took a couple of Ibuprofen hoping to relieve some of the pain I was having from my sciatica.

Once we returned to my folks house after lunch my husband took care of most of the things my mom needed me to do since I was having a hard time moving. He also did a few things that were not on our list like finding out why the lights to the pool and the pool sweep were not working properly. Click here to continue reading, or leave a comment »

9.10.13, Low Carb Diet Journal

I weighed 143-1/2 lbs. this morning and I am happy to be a pound and a half down from yesterday.

I enjoyed three cups of decaf coffee with cream.

My husband takes our dog on a walk on a regular basis and I decided to join them this morning. Our walk took us about a half an hour and I had to deal with little bugs flying in my face. Besides the bugs, the walk felt good and I really should use it as a start to resuming my goal of becoming fit and healthy.

When we returned, my husband and I went to the garden and picked the vegetables that were ready. Our garden is producing rather nicely and we have been harvesting cucumbers, grape tomatoes, and zucchini. Today we picked a few hot peppers, some more grape tomatoes, and a large zucchini that we are going to stuff with a family spaghetti sauce recipe that we are going to top with cheese. We won't be having this for a couple of days but they sure do sound good. There are plenty of beefy tomatoes, bell peppers, and hot peppers, and it won't be long before they are all ready. I spotted a few more cucumbers and zucchinis growing so they are not quite finished producing yet.

I am working on my third day of eating once a day and it has not been difficult. I am convinced that I was eating my second meal out of habit and desire instead of hunger. 9.09.13, Low Carb Diet Journal

I was up earlier than usual this morning. We are dog sitting and the dog has been doing well acclimating to his new surroundings. He was barking and would not stop. Instead of ignoring him, which was impossible, I got out of bed and went to see what the problem was. He was running in front of the fenced area of our house and looking up into the trees. I grabbed my flashlight and saw a really large raccoon in one tree and heard another one in the other tree. Once I spotted the first raccoon, I called the dog through the side door and brought him into the house so the raccoons could get away. I left the front lights on and watched the one raccoon leave the tree and then I began watching the other one waiting for the other raccoon to leave. This tree is located right in front of our living room window and while sitting in my chair I watched and counted five more come out of the second tree. Once the raccoons were out of my front yard I let the dog go back outside and he found them in another tree. Since the barking resumed and it was not even 5 a.m. by that time, I put the dog into the fenced in area of our front yard and waited a couple of hours for the raccoons to be gone.

Of course I made me a pot of decaf coffee since I was up. I was not keeping count of how many cups I drank and ended up drinking the whole pot. Each cup included cream and I would have had more if there was any.

I stepped on the scale at 4 a.m., about two or three hours before I usually do and did not like to see my weight reach 145 lbs. I knew it was because of all the carbohydrates I ate the day before and to be perfectly honest, if I had to do it over again, I would do the same exact thing. 9.08.13, Low Carb Diet Journal

My weight was 142 lbs. this morning. I can't say that I was surprised because of the amount of ribs I ate last night.

I enjoyed all three cups of my decaf coffee with cream this morning.

We needed to take a trip to Costco and there are two places I like to eat that are in the same vicinity. The first place is a taqueria that makes a really good taco salad that they call a flying saucer. I ordered it without beans and it included carne asada, cheese, guacamole, lettuce, tomato, and sour cream and it was served in a flour tortilla salad bowl. I added pico de gallo to my salad and also enjoyed the pico de gallo with some corn tortilla chips while I waited for my meal. You would think that I would be satisfied with everything that I ate and I was, but I have this dessert belly that has its own separate gauge.

The second place I like to eat at is Cold Stone Creamery. I can't get dark chocolate ice cream at just any Cold Stone, but this one carries it all the time. I can never resist getting the largest cup and the people that prepare it are generous with the almonds that I like to add to my ice cream. Since I had already eaten quite a bit and I intended on eating the every single bite, my husband and I took a walk since the creamery is located downtown. We ended up window shopping and we walked four blocks before going around the block and heading back to our car. It was no where near enough exercise for the amount of food I ate, but it was better than nothing.

My weight is the same as yesterday, 141-1/2 lbs.

I enjoyed my three cups of decaf coffee with cream.

My husband made his recipe of cashew chicken and added broccoli to it. It was a meal in itself so I completed it with some of my homemade dark chocolate almond bark.

I was looking forward to leftover ribs all day so I made a salad to go along with them. My salad included some romaine lettuce, a stalk of celery, homegrown cucumber, and some of our homemade raspberry vinaigrette dressing. There were more ribs than I needed to eat, but I ate them anyway. I really do eat too much protein!

I dropped half of a pound, back down to 141-1/2 lbs.

I enjoyed my three cups of decaf coffee, all of them with cream.

Today my lunch included a cabbage salad made with our homemade mayonnaise, lemon juice, salt, and pepper. My husband seasoned some pork ribs with his recipe of Emeril's Blast and slow cooked them on the barbecue. They were delicious and I only ate three or four of them with the grape tomatoes that we harvested from our garden. I completed this meal with some of my fantastically, delicious, homemade dark chocolate almond bark.

Dinner was leftover pork ribs. I wanted a salad to go along with my ribs so I made mine with romaine lettuce, a stalk of celery, part of a homegrown cucumber, and some of our homemade raspberry vinaigrette dressing. My husband warmed me some pork ribs and I was happy with three more of them to go along with my salad.
