9.25.13, Low Carb Diet Journal

My weight dropped three quarters of a pound and I saw 138-3/4 lbs. on my scale this morning. I can't say that my weight will stay in the 130's, but it sure was nice to see it again.

I drank three cups of coffee with heavy whipping cream and as soon as I finished them, I started drinking water. I thought about stopping after two cups but decided that I am not ready for that right now.

We bought a large package of New York steaks and my husband cut them into thick steaks. Because he cut them an inch thick, we shared one for our lunch today. He started the barbecue and seasoned the steak with salt, pepper, garlic, and paprika. I wanted mushrooms to go with my steak so my husband sliced six of them and sauteed them in coconut oil. When my steak was ready, I enjoyed my half with half of the mushrooms. Surprisingly, I could not eat what was on my plate so I put the remainder into the refrigerator for another time.

When it came time for dinner, I was ready for my leftover steak. My husband warmed it up for me and he also warmed up my leftover mushrooms. Since I did not eat a vegetable with my earlier meal, I grabbed the rest of our homegrown cucumber and sliced it for the both of us.

9.24.13, Low Carb Diet Journal

My weight dropped a pound since yesterday and I weighed 141 lbs. this morning. As I've mentioned in my earlier posts, I am trying to convert my body into a fat burner instead of a sugar burner so I am eating high fat, high protein, and low carb. I have been avoiding sugar this last week, and to my surprise, I am not missing it at all.

I enjoyed my three cups of coffee with heavy whipping cream and I had no problem stopping after my third cup. I really like the taste of my coffee with cream each morning and I can honestly say that if it did not affect my hot flashes, I would drink more.

My husband made us a tri tip for our lunch. He seasoned it with salt, pepper, garlic, and paprika, and grilled it on the barbecue. When it was almost ready, I made us each a salad. My salad included two cups of romaine lettuce, half of an avocado, a stalk of celery, some of our homegrown cucumber, and our homemade vinaigrette dressing. I love my homemade raspberry vinaigrette dressing but I am ready for a change so my husband made us a vinaigrette dressing that we used to make with mustard, olive oil, and red wine vinegar. Actually, we have always used coconut vinegar, but it has been so long since we made this dressing we forgot and used red wine vinegar. The tri tip was ready about the same time as our salads were and my husband cut me a piece. I ate my entire salad first and to my surprise, I was only able to eat about half of the tri tip that was on my plate. Instead of eating it all and stuffing myself, I was satisfied with my meal and put the other half of the tri tip into the refrigerator for another time. 9.23.13, Low Carb Diet Journal

My weight is the same as it has been the last few days, 142 lbs.

I drank three cups of coffee with heavy whipping cream while I was getting ready to go out of town. This trip was to look for a replacement seat belt for our truck. Last spring, our dog jumped into the truck without anyone noticing. My husband had been working outside and when he was finished, he shut the door. When we realized our dog was not around, we began looking for him. When my husband found him he was in the truck attempting to chew his way out. He chewed the seat belt in half and he also chewed the headliner but we don't have to replace that in order to drive the vehicle legally.

Before we headed out of town, we made a few stops in town before heading out. Once we reached the city, we went to my husbands favorite taqueria and had lunch. I ordered a carne asada flying saucer. The flying saucer is a taco salad w/beans, cheese, guacamole, lettuce, & sour cream in a flour tortilla shell. While I was waiting for my taco salad I ended up eating three corn tortilla chips with pico de gallo. When my meal arrived, I began eating it. I was surprised when I ate about half of it because I was full and did not want anymore. My husband was eating a burrito so I asked him to save the rest for another time and finish my salad since it does not refrigerate as well. He finished my salad and then we returned to the car and placed his leftover burrito into our cooler.

We continued with our shopping and when we returned to our town, we stopped at a few stores before heading home. My husband unloaded all the groceries and other items while I put on my work clothes. Before I left the barn yesterday, I hooked up the automatic waterers to each of their cages. The tubing was not set up for these particular cages so I needed to fix them so I could open the cage doors and not get hung up on the tubing. It took me longer than I wanted, but I got them done. 9.22.13, Low Carb Diet Journal

My weight is still the same, 142 lbs. I totally expected to see a loss this morning, but I didn't. The purpose of my new experiment, high fat, high protein, and low carbohydrates, is to change my body from a sugar burner to a fat burner.

I enjoyed my three cups of decaf coffee with heavy whipping cream. It was easier to stop after my third cup this morning because I don't like the effects it is having on my hormones.

I was trying to decide what to eat for my first meal today and since we still have a lot of eggs left in the refrigerator, I decided to have another omelet. I asked my husband to defrost some of our leftover homemade chili without beans because a chili cheese omelet sounded good.

This new way of eating is having an effect on my appetite. I was only able to eat about half of my chili cheese omelet before I could not eat anymore. My brain is finally starting to register when I have had enough to eat, which is a good thing!

I went out to my barn and reorganized the cages for my 8 remaining Holland Lop rabbits. I can't believe I got rid of 21 rabbits yesterday, but I am happy I did. I used to have 28 cages in the three sections of my barn but I have decided to remove all the cages from one of the sections. Even though I am eliminating one whole section, I will still have 12 cages in each of the other two, leaving me with a total of 24 holes. I don't know how much longer I will have the Holland Lops, but I do know that I will never fill up all the cages like I did with the meat rabbits.

I worked outside all afternoon and did not return to the house until 6 p.m. While I was finishing up, my husband was in the kitchen making us some homemade pizza sauce from our homegrown tomatoes. He also made us some cauliflower for our dinner. I dipped the cheese bread into the pizza sauce and it was just like eating a cheese pizza without all the toppings. Delicious!

9.21.13, Low Carb Diet Journal

My weight is still the same, 142 lbs. I am surprised that my weight is stable since I have not been eating anywhere near as much food as I ate just last week. For some reason, the new way that I am eating makes me feel as if I am getting plenty of food because I am feeling full on a lot less.

I enjoyed three cups of decaf coffee and I added heavy whipping cream to each cup. I did a lot better with stopping after my three cups because my hot flashes are definitely getting worse when I drink too much.

My first meal was a pork chile verde omelet w/monterey jack cheese. Since we still had some pork chile verde leftover and my refrigerator is packed full of eggs from our chickens, I decided to eat eggs again today. My omelet included two eggs, about a cup of pork chile verde, and some monterey jack cheese. When I got to the end of my meal, I got to the point where I felt as if I could not eat anymore, but I have never been one to leave food on my plate, so I finished it.

My rabbit buyer showed up and since my entire herd included pedigrees, I needed to make sure every single one of the rabbits were packed up with their identification. It was raining outside but at least the barn was dry. It took me quite awhile to get them all packed up and into their transport cages and I was happy to see that it had stopped raining by the time I finished.

My pork chop was ready when I finally made it back into the house. It was seasoned with salt and pepper and cooked in bacon grease. When I finished it, I didn't need anything else to eat but I warmed up and ate about a half a cup of our leftover braised red cabbage since I had not eaten any vegetables with my earlier meal.

9.20.13, Low Carb Diet Journal

My weight was up another half pound, but I weighed myself early so it really didn't count. After drinking three cups of coffee with cream, I weighed myself at my usual time and I weighed the same as I did yesterday, 142 lbs. For the last few days I have been eating a high fat, low carbohydrate diet, and I like it.

I enjoyed three cups of my decaf coffee and added heavy whipping cream to each cup. I really enjoy my coffee each morning and if it did not cause my hot flashes to go crazy, I would be drinking a lot more.

I had chile verde over eggs for my first meal of the day. We had some leftover pork chile verde in the freezer so my husband defrosted it for us. After warming up the pork chile verde he fried me two eggs and spooned about a cup of chile verde over the top of them. It was delicious and very satisfying. Since I had eaten enough food I did not bother making me a vegetable.

I made the decision to sell all of my standard Rex rabbit herd and I am expecting the buyer tomorrow. Since I wanted to make sure that I sexed the rabbits correctly, I went out and made sure. While I was out there, I cleaned all the cages and scooped up all the waste before dumping it into my waste pile. I have a total of 21 rabbits that I am selling so I spent quite a bit of time getting everything ready.

Dinner was tilapia and leftover cauliflower. My husband seasoned the tilapia with his recipe of Emeril's Blast and fried it in a pan of coconut oil. Since I did not eat any vegetables with my earlier meal, I made sure to have some with this one. My husband warmed me a cup of the leftover cauliflower and drizzled about a tablespoon or two of melted butter over it. I had two small pieces of tilapia and about a cup of cauliflower with butter.

9.19.13, Low Carb Diet Journal

My weight is up a half of a pound and I weighed 142 lbs. this morning. Too much fat? Too much protein? I know I did not eat too many carbs because I did not have any yesterday.

I am on my own today so I made me a pot of decaf coffee. When it was ready, I poured my first cup and added cream. As the morning progressed, I kept refilling my cup with coffee and cream until I drank the whole pot.

I had leftover pork ribs for lunch. We had three small ribs left so I warmed them up. I also warmed me about a cup of leftover braised red cabbage. My husband made this last night and it was made with bacon, onions, chicken stock, red wine vinegar, and spices. I enjoyed my meal and could not wait to eat my cheesecake cupcake. It was so good, I went back into the kitchen and grabbed another one. I could have gone back for another, which tells me that I am still insulin resistant, but I fought the urge and told my brain that I did not need anymore. I'm not sure how well limiting my sugar to every other day is going to turn out, especially if I double up the following day.

Dinner was leftover chicken. My husband made it home in time for dinner so he removed a half of a chicken out of the refrigerator and warmed it up for us. I ate the breast and wing and he ate the leg and thigh. I did not bother heating up any vegetables because when I finished my chicken, I did not have anymore room for anymore food.

9.18.13, Low Carb Diet Journal

My weight is 141-1/2 lbs., up one half pound since yesterday.

I was going to drink three cups of my decaf coffee with cream but when my husband took my cup into the kitchen to get me a glass of water, he refilled my coffee cup. I thanked him and told him I would drink it and ended up drinking four cups of coffee with cream.

I have been doing a lot of reading since my weight is still hovering above 140 lbs., and I finally decided to begin lowering the amount of carbohydrates I eat each day. Since I don't want to do anything drastic, I am going to begin to limit my consumption of sugar, coconut sugar in my case, to every other day.

I have tried eating once a day and that worked out well, getting my weight down a few pounds, but I don't want to only eat once a day, everyday. Actually, after reading several Intermittent Fasting ebooks, I can't say that I am really following it since I have been drinking coffee with cream each morning and there have also been a few evenings as well.

The way of eating I want to follow is WHEN. Aaron Blaisdell's slogan: “Not IF, but WHEN (When Hunger Ensues Naturally)” may not be an official diet, but it is a way of eating that I would love to be able follow. 9.17.13, Low Carb Diet Journal

My weight is 141 lbs., the same as yesterday.

I limited my decaf coffee to three cups with cream just in case I wanted more this evening.

My husband defrosted a couple of New York steaks for our lunch. I suggested he make his recipe of peppercorn steak so that is how he prepared them. Instead of a salad for my carbohydrate, my husband warmed up a piece of the leftover zucchini boat. I ended up eating half of my steak and putting the rest away for another time since I had the zucchini boat to eat. It was filled with ground beef, onions, pork sausage, tomato sauce, and topped with mozzarella and parmesan cheese. I probably ate too much but when I finished it I still went ahead and reached into the refrigerator for one of my homemade cheesecake cupcakes.

I started getting hungry around 6 p.m., so I had my leftover New York steak with peppercorn sauce. I did not make me any vegetables because when I finished my steak, I didn't need anymore food.

9.16.13, Low Carb Diet Journal

I dropped three quarters of a pound since yesterday and my weight is 141 lbs. this morning.

My back is much better today so I should be able to resume the things I used to do before I moved wrong and caused my sciatica to flair up.

I enjoyed three cups of decaf coffee with cream. My husband made me a full pot so I am proud of me for stopping at three since I do enjoy my coffee each morning.

Lunch was a salad and pork ribs. My husband seasoned the ribs with his recipe of Emeril's Blast and then he slow cooked them on the barbecue. When they were almost ready, I made us each a salad. My salad included about two cups of romaine lettuce, a stalk of celery, a portion of a homegrown cucumber, a slice of a homegrown tomato, and the last couple of teaspoons of our homemade raspberry vinaigrette dressing. I enjoyed about four or five pork ribs with my salad. It sounds like a lot but my appetite is under control and I was satisfied when I finished them. The truth is, I did not feel full but I could not eat another rib. When it came time for me to eat a carbohydrate, I grabbed a handful of almonds and that is how I finished my meal.

After cleaning the dishes I took all the ingredients out for me to make my cheesecake cupcakes. I filled the paper cupcake papers with the almond meal and butter mixture, mixed the cheesecake batter, and poured it on top before baking them. While they were in the oven, I licked the bowl and scraper before washing the dishes again. They only take about seventeen minutes to bake so after I removed them from the oven, I left them to cool on a wire rack and went outside to feed the animals.

Even though I enjoyed the cheesecake batter over an hour after I finished my meal, I was not hungry when it came time for dinner. That is the first time that I have ever eaten outside of my hour on purpose. My justification was that I am fasting and most fasts last for hours, so what the heck.
