My weight is up a quarter of a pound and I weighed 138-3/4 lbs. this morning.

I enjoyed both cups of my decaf coffee with heavy whipping cream.

I had leftover ribs again. I made a couple of salads and mine included about a cup and a half of romaine lettuce, about three quarters of a stalk of celery, about an ounce of jack cheese, and about a tablespoon of our homemade vinaigrette dressing. My husband warmed me up three ribs that I ate along with my salad.

I will admit that I am a meat eater and it has always been the best part of my meals. I can appreciate all the other goodies that I get to eat when I am following the guidelines of CALP, but this is the fourth day that I am following the induction phase of Atkins, and I am not missing my carbs at all.

Because I am limiting carbohydrates, I bought an assortment of vegetables when my husband and I were at the store today. I also needed sugar for the unhealthy banana nut breads that I will be making with the now ripened bananas that I brought home last week. I will be making one with coconut flour and coconut sugar to put into the freezer when I return to CALP. I am still doing fine without my beloved chocolate and I expect to sail right through the two week induction phase of Atkins.

Dinner was pork chops and a cabbage, mushrooms, and zucchini stir fry. My husband seasoned our pork chops with salt and pepper and fried them in a cast iron pan of coconut oil. He then cut a quarter off of a head of a red cabbage and sliced about six mushrooms. He chopped a half of a zucchini and stir fried them in a wok of coconut oil. I thoroughly enjoyed about a cup of mixed cooked vegetables with my pork chops and was happy with my meal.

10.15.13, Low Carb Diet Journal

My weight is exactly what it was yesterday, 138-1/2 lbs.

I enjoyed my two cups of decaf coffee and I added heavy whipping cream to both of them.

My husband defrosted some pork ribs yesterday so he seasoned them with his recipe of Emeril's Blast and placed them on a baking pan to come to room temperature while he got the smoke chips ready. He got the barbecue started and when everything was ready, he placed the ribs into our Webber to slow cook.

Later on, I made us a couple of salads and mine included about a cup and a half of lettuce, three quarters of a stalk of celery, about an ounce of jack cheese, and I dribbled about a tablespoon of our homemade vinaigrette dressing over the top. I began eating my salad before the ribs were ready and my husband fixed me a plate of three. The ribs were delicious, a little spicy, and I was satisfied with my meal when I finished.

We usually try to eat dinner by 6 p.m., but I was hungry earlier than usual so my husband warmed up some of our leftover ribs around 5:15 p.m. There was an end piece that I thought was mostly bone so I had him warm me up four ribs. When I began eating the bone, I discovered there was more meat than I thought so when I finished my fourth rib, it was more than I needed. I should have only had three ribs but they were so good, I could not leave that fourth one on my plate. I was full when I finished and no vegetables were needed.

10.14.13, Low Carb Diet Journal

When I stepped on my scale this morning I lost a quarter of a pound and weighed 138-1/2 lbs. This is the same amount that I weighed on 10.01, before eating flour tortillas on three separate occasions and linguica processed with sugar on two others.

I enjoyed two cups of decaf coffee and added heavy whipping cream to both cups. After I finished the second one, I started on my first glass of water. I believe that limiting my coffee to two cups each day has begun helping my hot flashes go away since they now seem to be happening less often.

We had beef tri tip for our lunch. The last time my husband made us a tri tip roast, there was more than we could eat in a few days so I had him put the remainder into the freezer. He took the tri tip out of the freezer and defrosted it. He then cut it into two pieces before putting it into the toaster oven to warm. Instead of having a salad, my husband defrosted and warmed us up some of the broccoli that he had pre-cooked before freezing. I had about seven ounces of tri tip and about a cup of broccoli with a tablespoon or two of butter poured over the top. My meal was delicious and I was satisfied with the amount.

I had a chicken breast with jack cheese melted over the top for dinner. My husband cut two fillets into four pieces before seasoning them with salt, pepper, garlic, and turmeric. He cooked the fillets in coconut oil and when they were almost ready, he added some grated jack cheese over them. I enjoyed both halves of my chicken breast and was satisfied with the amount of food that I ate.

My weight is the same as yesterday, 138-3/4 lbs.

I got up around 7 a.m., and after stepping on my scale, I enjoyed my two cups of decaf coffee with heavy whipping cream. As soon as I finished them, I poured my first glass of water for the day.

We had a pork roast that we were going to have for lunch so my husband seasoned it with salt and pepper and put it into the oven to roast slowly. Around 11:30 a.m., it was almost ready so I made us a couple of salads. Mine included about a cup and a half of lettuce, three-quarters of a stalk of celery, three tablespoons of cheddar cheese, and about a heavy tablespoon of our homemade vinaigrette dressing. Before my husband put the roast back into the oven to brown, he drained the fat/juice into a sauce pan in order to reduce it to a sauce. When the roast was ready, he served me about an eight ounce portion and spooned a teaspoon of the sauce over the top. I enjoyed it along with my salad and when I finished, I was pleased with my meal.

I was hungry when it came time for dinner. I had one piece of pork roast leftover so that is what I wanted for my dinner. It was about a six ounce portion and because I did not need anymore, I was happy that I finished the last of it. I was satisfied with the amount of meat I ate and I did not bother making anything else to go along with it.

Because I want to follow a high fat, high protein, low carbohydrate diet, I have been doing a lot of reading. My goal is to learn how to burn fat instead of glucose, so this is my first day of following the two week induction phase of Dr. Atkins New Diet Revolution, 2002 edition.

10.12.13, Low Carb Diet Journal

My weight is down one quarter of a pound from yesterday and I weighed 138-3/4 lbs. this morning. I did not expect my weight to drop because of the amount of food I ate yesterday, but I was sure happy it did.

I enjoyed my two cups of decaf coffee with heavy whipping cream. As soon as I finished both cups, I poured me a glass of water and began drinking it.

Yesterday, my husband defrosted a pork roast and a whole chicken for us to eat today. Since I wanted pasteles for dinner last night I decided to eat a couple for my lunch. My husband started the barbecue, got his smoke chips ready, and after cutting the chicken in half, he began to cook them. My meal started with two pasteles. After finishing both of them I made me a salad with two cups of romaine lettuce, a stalk and a half of celery, and about a tablespoon of our homemade vinaigrette dressing. I tore a wing off of one of the breasts and began eating it along with my salad. When I finished, I wanted more chicken so I grabbed the breast and ended up eating an entire quarter of the chicken.

Because the chicken was prepared to perfection and tasted so good earlier, I wanted to eat another breast/wing combo for my dinner. I am concentrating on eating less carbohydrates with more fats and protein so I did not have any vegetables with my meal.

10.11.13, Low Carb Diet Journal

My weight is up 1-3/4 lbs. since I left home, but I am not surprised. I ended up eating breakfast at a Mexican restaurant for two days in a row and even though I did not eat any corn tortilla chips and salsa, I did order some processed meat that also contains sugar.

I was happy to be able to enjoy both cups of my decaf coffee with heavy whipping cream this morning. I am still doing well in limiting my coffee to two cups these days.

Normally I wait to feed my animals in the afternoon but our oldest daughter's dog that is staying here for awhile found his way outside our fence and he was at the neighbors house. Since I didn't know how he was escaping our fencing, I called him back home and watched to see where and how he was going to return. Since I was able to see the approximate area where he was getting in and out, I had to walk up past the the barn area to see the exact spot. We found that he was squeezing through the gates so while my husband blocked it, I went ahead and fed the chickens and rabbits.

Because the pasteles take two hours to cook, my husband put two dozen into a pot of water and began boiling them. I was hungry earlier than usual so my husband defrosted a New York steak for the two of us and started the barbecue. I made us each a salad and mine included two cups of romaine lettuce, a stalk of celery, about eight slices of our homegrown cucumber, and about a tablespoon of our homemade vinaigrette dressing. He also put a couple of hot dogs on the barbecue and when the steak and hot dogs were ready, he fixed his plate with about a quarter of the steak and a hot dog. He gave me the remaining three quarters of the steak and I ate it all, along with my salad. After we finished our meals, the pasteles were ready so he opened one up and offered me a bite. It was fantastic and even though I was full I had a few bites, even finishing up the last bit of the second one that he opened and left on his plate. 10.10.13, Low Carb Diet Journal

I have no idea what I weigh this morning because I prefer to use my own scale and I was not at home. I will update my weight the morning after I return home.

Because I was not expecting to stay over at my folks, I did not bring any decaf coffee or heavy whipping cream with me so I did not start my day with any coffee. I did grab a bottle of water and began drinking it first thing this morning.

The green bananas were not expected at the store until 10:30 a.m., so my dad took his truck so he could go pick them up after breakfast. My mom, sister, husband, and I, met him at the same Mexican restaurant we went to the day before. I ordered the same exact thing as I did yesterday, two eggs over medium and a stick of linguica except this time I put the pico de gallo over my eggs. I found that I like the pico de gallo over my eggs much better than salsa so I have to remember that the next time I order eggs. My weight stayed the same as yesterday and I weighed 137-1/4 lbs. this morning.

I enjoyed my two cups of decaf coffee w/heavy whipping cream while I was getting ready to go to my folks house. The purpose of our visit was because my mom, dad, sister, husband, and I, were going to make pasteles. Pasteles are a Puerta Rican dish and just like Mexican tamales, they are a lot of trouble to make so whenever we make them, we make a bunch.

My husband and I took our truck so we could stop at our daughter's house and pick up a dresser and desk that was removed from one of the bedrooms. Since we left our house around 7:30 a.m., and did not expect to be home until later that night, we took our dog with us.

When we arrived at our daughter's house, we began loading the furniture. She was still there getting ready for work so we got to spend a few moments with her. After everything was loaded, we visited a few more minutes before heading to my folks house.

When we arrived, we found out that the green bananas that had been ordered did not arrive so my dad and sister were both out trying to locate some. My dad was unable to find any and the case my sister ended up buying were already gassed and turning yellow. Since we were unable to use the bananas, we went out to breakfast. We went to a Mexican restaurant and I ordered two eggs over medium and a stick of linguica. I added some salsa to my eggs since I do not like them by themselves. I try not to eat any processed food but my meat choices were bacon, ham, or linguica, and they are all processed. Click here to continue reading, or leave a comment »

10.08.13, Low Carb Diet Journal

My weight dropped another quarter of a pound and I weighed 137-1/4 lbs. this morning.

I started my day with my two cups of decaf coffee and added heavy whipping cream to each one of them. As soon as I finished my first cup I noticed that I was already experiencing a hot flash. I almost skipped my second cup but I decided to give myself a couple more weeks since it has only been a few days since I quit drinking my third cup.

Lunch was a chicken breast seasoned with salt, pepper, garlic, and turmeric. My husband fried two half chicken breasts in coconut oil and served me one of them on a saucer. He also made us some spinach and drizzled some butter and salt over it. Mine was served to me in a small bowl. It is still hard for me to believe that I can eat a single chicken breast and a little over a half of a cup of spinach and feel full when I finish eating it.

There was a chance of rain expected tonight and tomorrow so I had to go out to the barn and put away the cages I left outside. I wanted to get them off the ground so I got them off the ground by reorganizing my overflow area and added four more holes to my barn. While I was out there I did some cleaning so I stayed busy for awhile getting some exercise.

Dinner was tilapia seasoned with salt, pepper, garlic, and paprika. My husband fried them in a pan of half coconut oil and half butter. While they were cooking I made me a couple of stalks of celery and added cream cheese to them. My husband added two fillets to my saucer and after I finished eating them I cleaned two stalks of celery and added cream cheese to both of them.

10.07.13, Low Carb Diet Journal

My weight dropped a half of a pound and I weighed 137-1/2 lbs. this morning.

I enjoyed my two cups of decaf coffee and I added heavy whipping cream to each cup. As soon as I finished my coffee, I started drinking my water.

My husband defrosted a couple of pork chops for our lunch. He seasoned them with salt and pepper and fried them in a cast iron pan of bacon grease. I had some mushrooms leftover from yesterday so he warmed them up for me to eat with my pork chop. We finished the last of the lettuce yesterday so we had some of the broccoli that was cooked the other day. When my husband cooked the broccoli the other day, he cooked the whole bag from Costco and froze what we did not eat. Once the broccoli was warm he melted some butter and poured it over the top of them. My plate was fixed with a pork chop, about an eighth of a cup of mushrooms, and I completed my meal with a small bowl of broccoli.

Dinner was leftover tri tip. My husband warmed us the rest of the tri tip that we put in the freezer a few weeks ago. We ate around our usual time since I did not get hungry until then. After finishing my portion of tri tip I was full so I did not bother to make us a vegetable.
