My weight is still 139 lbs.

I started my day with two cups of decaf coffee with heavy whipping cream. After I finished, I poured my first glass of water for the day.

I picked up some flour tortillas when I was at the store yesterday so I wanted to finish making the empanadillas since I still had some pastele meat left. I had bought a package of twenty so my husband and I worked together to make the empanadillas. My husband fried them in lard while I continued to assemble them and when they were all ready, he could not resist sampling them. Once they were cool, we put them in a plastic bag and put them into the freezer so they are available anytime anyone wants them.

My sister and her partner were having their wedding reception this afternoon so I wanted to eat something before I went. I knew that I would do much better at following my program if I ate before I left so my husband made me an omelet. My omelet included three eggs, some of our homegrown bell pepper, linguica, and mushrooms. Because it was so large, I was unable to eat it all.

I cleaned up the kitchen and got ready to go. I never wear makeup but I decided to put some on since I was going to my sisters reception. I can't believe how long it took me to put it on but I started early enough that we still made it out of the house at the time that we planned. The reception was an hour and a half away so we made one stop at Costco to fill up our car with gas and arrived a half an hour early. My husband and I unloaded the potato salads and macaroni and cheese and put them into the refrigerator. We were only there about five minutes before my cousins arrived and then our oldest daughter and her husband arrived a couple of minutes later. 10.25.13, Low Carb Diet Journal

My weight is up a pound and I weighed 140 lbs. this morning.

I enjoyed my two cups of decaf coffee with heavy whipping cream. As soon as I finished both of them, I poured my first glass of water and began drinking it.

We had some leftover pastele meat so while I was in town this morning, I picked up another package of flour tortillas. I did not get home until after 2 p.m., and as soon as I had a chance I made my husband and me a salad. He warmed up my leftover chicken breast and wing, and when it was ready, I put it on a plate and enjoyed it along with my salad. I have not had any sugar in awhile so since I am back to CALP and adding carbohydrates back to my one meal each day, I defrosted one of my homemade cheesecake cupcakes and thoroughly enjoyed it.

My sister is having her wedding reception this weekend and asked me to bring a couple of potato salads. Because she is having so many kids at the reception, I also made a huge batch of cheese for the macaroni and cheese that I will be adding to the cooked macaroni when the food is served.

Since I did not eat until after 3 p.m., I did not need or want anymore food when it came time for dinner.

My weight is the same, 139 lbs.

I started my day with two cups of decaf coffee and added heavy whipping cream to both cups.

My husband made us a whole chicken for lunch and after adding the smoke chips, he smoked it on the barbecue. When it was almost ready I made us each a salad. Mine included romaine lettuce, celery, cheddar cheese, jack cheese, and some of our homemade vinaigrette dressing. When the chicken was ready, I grabbed a breast and wing and put them on my plate. I started eating my salad and when the chicken was cool enough, I ate it with the remainder of my salad.

My husband and I went to town and when we were at the store, I picked up some flour tortillas and olives so I could make the empanadillas. I gave my mom my dough press so we stopped at the Kitchen store and picked one up on our way home.

I made the empanadillas by adding the pastele meat and an olive to the tortilla and then I used the press and turned them into meat turnovers which we call empanadillas. My husband melted the lard and as soon as it was ready he began frying them. After they cooled down, he ended up eating four of them. Since I could not resist the way they looked and smelled, I ended up eating one with extra pastele meat.

Since I caved in and ate the flour tortilla, exceeding my twenty grams of carbohydrates, I am no longer following the Atkins induction. In the end it always comes back to how much I love the freedom of following CALP, so that is what I will continue to do.

My weight is still the same, 139 lbs.

I started my day with two cups of decaf coffee and added heavy whipping cream to both of them.

The last time we went to the store, my husband and I bought some pork roasts so we could make empanadillas. He cut up one of the roasts while I made the sofrito and after the meat and sofrito were both cooked, we mixed them together. Since I did not have any flour tortillas, we put the meat into the refrigerator until the following day when we planned on going to town to pick them up, among other things.

We had leftover tri tip and a salad for lunch. My husband put the tri tip into the toaster oven to warm and I made us each our salads. Mine included romaine lettuce, celery, and some of our homemade vinaigrette dressing. When the tri tip was warm, I enjoyed it along with my salad.

For dinner, my husband made us a recipe called Bombay chicken which was shared by a long time CALPer on a support group that I visit from time to time. He used skinless, boneless, chicken breasts even though the recipe called for bone-in chicken. When it was ready, I fixed me a bowl and it was delicious. As a matter of fact, it was so good that I want to have it again next week. Since I wanted to taste the pork pastele meat and make sure that it had enough sofrito, I also ate a couple of spoons of it.

10.22.13, Low Carb Diet Journal

I got up earlier than usual since I could not sleep so I did not step on the scale right away. It was only 3 a.m., so I did not bother making me any coffee since I really wanted to be able to go back to sleep. I never did get back to sleep so I stepped on my scale around my normal time and I was 139 lbs.

I ended up drinking two cups of decaf coffee and added heavy whipping cream to both cups. As soon as I finished them, I poured my first glass of water and began drinking it.

Since I got up so early, I became hungry earlier than usual so my husband made me an omelet for my brunch. It started with three eggs, two pieces of chopped bacon, some jack cheese, and chopped mushrooms. It was exactly what I wanted and I ate every single bite.

My husband started the barbecue because we were having beef tri tip for dinner. When it was almost ready, I made us each a salad and mine included romaine lettuce, celery, cheddar cheese, and our homemade vinaigrette dressing. My husband cut me a chunk of the tri tip and it was so good, I am sure that I ate too much.

10.21.13, Low Carb Diet Journal

My weight is 139 lbs.

I started my day with two cups of decaf coffee and added heavy whipping cream to each one.

When I was at the store yesterday, I picked up a slab of New York steak since it was on sale. My husband cut it into one inch slices and fixed us a steak for lunch. I was going to make us each a salad but I needed to make fresh salad dressing and by the time I got around to making it, the steak was ready. Since the steak was ready before I got a chance to make the dressing, I did not bother making us a salad. I warmed up my leftover mushrooms from last night and added them to my plate while my husband defrosted some broccoli and warmed it up for us, drizzling butter over the top. My meal was delicious and I still had some leftover New York steak for my dinner.

I made the salad dressing so I could make us each a salad for dinner. I have not been eating many greens the last few days and I wanted a salad. I began by adding romaine lettuce, celery, both cheddar & jack cheese, and some of our homemade vinaigrette dressing to a bowl. When my leftover steak was warm, I put it on my plate and began eating my meal. The steak was bigger than I thought, but I ate the whole thing anyway.

10.20.13, Low Carb Diet Journal

I was not home so I did not weigh myself again today.

I started my morning with a bottle of water since I did not have any decaf coffee or cream.

Mom and I went searching for garage sales and we found a couple but we spent more time driving then we did shopping. We had to quit searching and met my dad at the house so we could go to breakfast. We went to another Mexican restaurant but this time when I ordered my decaf coffee I only needed one container of half & half for each cup. I did end up drinking three cups of decaf coffee with a total of three containers of half & half. I ordered carne asada and eggs and this time I had my two eggs scrambled. Since I am not fond of eggs, I added some pico de gallo to them. I added the three slices of avocado my mom gave me to the top of my carne asada steak and enjoyed my meal. I ignored the chips, salsa, potatoes, and toast, and added them to a container to take home to my chickens.

I was able to leave for home around 4 p.m., and I was too tired to stop at Costco. Once I got to town, I did stop at the grocery store to pick up a few items that we needed. After I arrived home around 6 p.m., my husband helped me unload the car. I brought four pork chops home with me since my mom did not cook them the night before and had my husband cook them for our dinner. I had some mushrooms that needed to be cooked so I asked my husband to cook them in coconut oil so I could enjoy them with my two small, thin, boneless pork chops.

10.19.13, Low Carb Diet Journal

I was not home so I could not step on my scale to see what I weighed this morning.

I forgot to take some decaf coffee and cream with me to my folks house so I started my day with a bottle of water.

My folks and I went to a Mexican restaurant for breakfast/lunch and I ordered a cup of decaf coffee. I added two containers of half & half to both cups that I drank because the coffee was strong and one was not enough. The meal that I ordered was carne asada and eggs. My two eggs were prepared over medium and I added some pico de gallo to them. My mom ordered a tostada and it came with some avocado which she does not eat, so she gave my dad and me about three slices each. My meal also included some tortilla chips & salsa, potatoes, and toast but I did not eat any of them and packed them to go so I could give them to my chickens when I returned home.

Mom, Dad, and I stopped at a garage sale that was across the street from the restaurant but we did not stay long because my dad had an appointment to meet someone. We took him home so he could get his truck and then mom and I returned to the garage sale to pick up an item she purchased when we were there earlier. By the time we finished, it was too late to go searching for anymore garage sales but we did look on our drive home.

I was unable to get everything done that my mom needed me to do, so when it came time for dinner I was still at my folks house. My mom made pork chops, rice, and sliced a couple of tomatoes for dinner. The pork chops were small and thin and I ended up eating three of them. I also added two slices of tomato to my plate and ate them with mayonnaise.

10.18.13, Low Carb Diet Journal

My weight is up another quarter of a pound and I weighed 139-1/4 lbs. this morning. When my weight jumped up a quarter of a pound yesterday, I should have looked up the amount of carbohydrates that were in the mixed vegetable stir fry that I ate. Apparently, cabbage and zucchini are both higher in carbohydrates than I thought so I may have exceeded my 20 grams of carbs two days in a row.

I enjoyed my two cups of decaf coffee and added heavy whipping cream to both cups. As soon as I finished them, I poured my first glass of water and began drinking it for the day.

I wanted an omelet so I asked my husband to make me one with bacon, jack cheese, and mushrooms. He had the bacon cooking in the oven and when the first batch was ready, he started making my omelet. I walked into the kitchen and grabbed a piece of bacon while he began making my omelet. He started with two eggs that he scrambled and put in a pan of butter. He then added two slices of chopped bacon, about a cup of mushrooms cooked in coconut oil, and about an ounce of jack cheese. When the cheese was melted, he served me my omelet and it was delicious. I enjoyed my meal and was satisfied with my choice.

I had to get ready to go to my folks house so I could return their dogs that I have been taking care of this last week while they were away. My husband helped me pack up the dogs and their crate and then I headed to my folks house. Today is my folks anniversary and I had already made my mom some banana nut bread but my dad doesn't eat it. Since he likes a pumpkin pie that is sold during this season, I stopped at the store and picked him up one. Click here to continue reading, or leave a comment »

10.17.13, Low Carb Diet Journal

My weight is up a quarter of a pound and I weighed 139 lbs. this morning. According to the Atkins book, I should be weighing myself once a week instead of everyday because our weight can fluctuate several pounds on any scale. I was supposed to measure myself before I started, but I didn't. Saturday will be the end of my first week so when I weigh myself on Sunday, I should have an idea of how I did this week.

I started my day with my two cups of decaf coffee and added heavy whipping cream to both cups. As soon as I finished them I poured my first glass of water and began drinking it.

We have a walnut tree and I have been picking up walnuts for the last month or so. The last time I shelled walnuts, I shelled quite a few. Since I use them for baking and my husband uses them as snacks, I had just enough walnuts shelled for me to make four banana nut breads today. Last week when I mentioned that I wanted to make banana nut bread when the bananas ripened, I was told to use real flour and sugar. The four loaves I made today contain white flour and refined sugar. Since my family doesn't care about eating this unhealthy stuff, I am giving a loaf to my mom, middle daughter, and son. The fourth loaf will be going into my freezer after my husband enjoys a slice or two. While the breads were cooling, I gave my son an opportunity to have a slice of his loaf and after his first bite he asked me how it was made. After I told him that it was the same old recipe I always used to make, he told me that it was delicious and that he could easily eat the whole loaf all by himself.
