Broccoli Cheddar Soup

Ingredients

4cbroccoli
1/2cbutter ((1 stick))
1clvgarlic
1/2 onion
2cchicken broth
8ozcheddar cheese
8ozcream cheese
1cheavy cream
 Unknownsalt & pepper (to taste)

Instructions

Cut the broccoli into the size you desire. Steam the broccoli until tender but not limp.

Chop the cheese into 1" blocks.

Cut the garlic and onion into little pieces. Add them to a frying pan and cook over low heat until they are tender.

In a sauce pan, heat the heavy cream until it simmers. Keep it warm.

In another pot, add the chicken broth and bring to a boil, then add the cheddar cheese. Stir until fully melted.

Add the cream cheese and butter/onion/garlic mixture. Stir until the cream cheese is fully melted. Reduce heat to medium low.

Stir in the heavy cream and add the tender broccoli. Cook over very low heat, stirring frequently, until broccoli begins to fall apart. You can use a stick blender if you prefer a creamier soup.

Add salt and pepper to taste.

Stir, serve, & enjoy!

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
