12.23.12, Low Carb Diet Journal

My scale popped back up to 135-1/2 lbs. this morning. I still don't like it when it goes up but it is something I will tolerate. I am on a mission and I am going to hit 125 lbs. with the help of my own personal high fat, low carb, low calorie, diet. I know there is no way I could do this if I was not following the CALP way! I am experiencing no hunger, and when I do, it is usually time for me to eat. Now, how could I ask for anything easier than that!

I chatted with my mom before I got started with my baking and candy making. The only cookies I had left to bake were peanut butter cookies so I mixed all the ingredients and made a double batch. While the dough was chillin in the fridge, I started my last batch of toffee. I baked the cookies and when they were cool, I put them in a plastic container to keep them fresh. I finished my toffee by spreading the chocolate over the top and sprinkling nuts over the top of it. I did lots of dishes and when the kitchen was clean, I made lunch and made another mess.

I decided to have the leftover coconut chicken for lunch. There were two 4 oz. pieces leftover so I added one of them to my salad. The rest of my salad included two cups of romaine lettuce, a tablespoon of almonds, one half of an avocado, two medium stalks of chopped organic celery, ten slices of peeled cucumber, & two tablespoons of Hidden Valley Ranch dressing.

Once the kitchen was clean and everything was ready to bag, I sat down and made a gift bag for our neighbors. I included everything that included chocolate covered almonds, chocolate covered peanuts, coconut haystacks, fudge, peanut brittle, toffee, chocolate chip cookies, chocolate chip cookies with nuts, oatmeal craisin cookies, and peanut butter cookies.

I made gift bags for my family as well. I saved enough candy and cookies from each batch to serve on Christmas and the rest is packaged to give away. I did keep a few extra oatmeal craisin cookies for my husband since they are his favorite.

My dinner was a one half cup serving of chile verde. My husband warmed it up in the microwave and it was fantastic. He had his over rice but I did not save enough calories to do the same thing so I had mine in a bowl all by itself. When I finished, I peeled and cut me ten more slices of cucumber and completed my meal. Dinner dishes were not too bad, especially since my husband did them, and I wrapped the last of the gifts. Time is running out and I have another busy day ahead of me tomorrow too.

About me

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
