11.20.13, Low Carb Diet Journal

My weight is down another quarter of a pound and I weighed 141-1/2 lbs. My weight may fluctuate because I do not always step on my scale at the same time each day. This morning I stepped on it an hour and a half earlier than I usually do and because I like to begin my day with coffee, I do not wait.

My husband made me a pot of decaf coffee and I added heavy whipping cream to each cup. I enjoyed four and a half cups over a four hour period and even though it is outside the guidelines of CALP, it is something that I have chosen to do.

We defrosted a London broil yesterday so my husband put it into the marinade this morning. After a few hours he started the barbecue and when the coals were ready, he put it on. He bought a large bag of broccoli when he went to Costco the other day and made some for our lunch. He then pre-cooked the rest so we could separate it into serving sizes and put it into the freezer. He also made some fresh bacon this morning. When our lunch was almost ready, I grabbed a piece of bacon and ate it. I also had a normal sized piece of London broil and a small bowl of broccoli with melted butter drizzled over the top. When I finished my meal, I wanted more meat but I knew that I had eaten enough so I just needed to wait the twenty minutes for my brain to realize it too.

It worked because I did not get hungry again until it was time for dinner. We still had some homemade leftover taco meat that was defrosted yesterday and I wanted to add it to my salad again tonight. I bought some avocados and shelled pumpkin seeds when I went to the store today because I want to increase the amount of magnesium I am getting from the foods that I eat. I made my salad with romaine lettuce, avocado, celery, jack cheese, cucumber, toasted pumpkin seeds, chicken taco meat made with bell peppers, onions, and tomatoes, and topped it with some homemade pico de gallo made with cilantro, lime juice, onions, and tomatoes. My meal was delicious and I believe I am going to like having a variety of salads for my dinner each night.

About me

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.
