7.26.13, Low Carb Diet Journal

My day started horribly. The pot of coffee I made this morning ended up spilling all over the counter because the filter folded. It ended up taking me over a half of an hour to clean up the mess and then I made me another pot. Everything worked out well with this pot and since I worked so hard for my coffee this morning, I drank the full pot, all four cups with cream.

My son and his girlfriend had to check out of their room by 11 a.m., and they were here by that time. They were getting ready to go home so I offered them breakfast before they hit the road, which they declined. My sister and I began packing the campsite since we were expecting more rain in the afternoon. While in the process of breaking everything down here, she went over to the other campsites to help them. Since the kids went home and my sister and her partner were getting a room for two nights, I invited my husband to join me in the motorhome for the weekend.

Our son ended up leaving Lake Tahoe around 11:20 a.m. Since I was expecting my husband, I changed the bed my sister and her partner were using and cleaned up the motorhome. Our son returned home around 1:30 p.m., and after my husband explained to him what he needed to do, he left for Lake Tahoe.

It never did rain and about 3 p.m., I ended up going to the casino with my sister and her partner. I took advantage of the room and took a shower but I wasn't there more than half an hour before my husband showed up. We picked up the luggage that was offered to us and then we returned to the campground to fix us dinner.

I had the teriyaki chicken in the marinade for a couple of days so I removed a breast, two thighs, and two legs and placed them in the pan to bake. While the chicken was baking I made my husband a couple of potato patties and each of us a salad. My salad included two cups of romaine lettuce, half of an avocado, the last of the celery, a half a cucumber, and two tablespoons of our homemade raspberry vinaigrette dressing. I enjoyed my salad with a chicken breast and if I would have cooked the wings at the same time, I would have eaten a wing too. I placed the remaining breast and wings into the pan and cooked them while we were eating our dinner. When they finished cooking, I added them to the thigh that was leftover from the first batch and my husband and I will be having them for dinner tomorrow. I completed my dinner with a few pieces of dark chocolate pomegranate candy. I was not very fond of the candy and would have enjoyed it if it would have contained nuts.

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
