11.21.12, Low Carb Diet Journal

My nights sleep was spotty but I was able to fight off my coughing and did not wake my husband. Naturally, when I woke up I began coughing right away but I am getting better.

I was thrilled to step on my scale this morning and finally break out of the 140s. Unfortunately, Thanksgiving is tomorrow so my weight may pop up but that won't be because of a pie I was going to make. Yesterday, I was going to make three pies today, including my favorite chocolate pecan. Since I was making the chocolate pecan pie especially for me, I decided I am not going to make it since my scale finally hit the top of the 130s this morning. I will only be making two types of pies today instead. My kids love pumpkin pie so my husband bought a package of frozen crusts from the store that I am going to fill. The other pie I will be making is a lemon layer cream cheese pie that will be made in my homemade coconut crust. I will not be touching the pumpkin pie since I have chosen to continue my wheat free way of eating and I don't plan on having any of the lemon layer cream cheese pie even though it will be wheat free. I will be making some of my homemade dark chocolate almond bark because it will take care of my sweet tooth and I can usually control how much I eat.

I feel like a fanatic worrying about my weight when I see myself because I look nice and thin in clothes, but when I see myself without clothing, I can still see the fat hanging off of my mid-section. I believe most of my remaining fat is subcutaneous rather than intramuscular which makes it harder to lose since I have been carrying it around for a couple of decades. My Body Mass Index says I am right at the top of a normal weight, so according to my body and the BMI, I need to lose more weight so I can reach the mid-range of a normal BMI.

We are having a traditional Thanksgiving meal tomorrow. We are expecting our oldest daughter and her husband, our middle daughter, our youngest son, his girlfriend, and their baby. We also invited her father and brother. When everyone arrives we will serve deviled eggs, potato chips & onion dip, spinach dip & bread, tortilla chips & salsa, and a vegetable tray. Too much snack food, as always!

Our meal will include turkey, sour dough bread stuffing, mashed potatoes & gravy, broccoli, cranberry sauce, my paleo recipe of sweet potato casserole, and a couple of loaves of homemade bread. I plan on eating off the vegetable tray and I will also include a couple of deviled eggs for my lunch. Since I plan on remaining wheat free, I will fix my plate with some turkey drizzled with gravy, broccoli, sweet potato casserole, and salad. If I have any room left, I will have a piece or two of my dark chocolate almond bark.

Lunch was a cube steak and salad. We still have some grass fed beef in our freezer so my husband defrosted a cube steak and it was big enough for the two of us to share. While he cooked the cube steak, I fixed us a salad to complete our meal.

My son brought my seven month old granddaughter over before he went to work mid-afternoon. I was not expecting her but I can never say no to watching her so I did what I could while she was here. Unfortunately, it was not enough so I have a few more things I will be doing tomorrow morning before anyone gets here.

Dinner was a pork chop. I ended up eating it while the baby was still awake so I did not bother with a vegetable since I barely had time to eat my pork chop.

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
