Carbohydrate Addict's Lifespan Program (CALP)

The Carbohydrate Addict's Lifespan Program (CALP) was created by Drs. Richard & Rachael Heller as a way to help people overcome 'carbohydrate addiction'. It differs from Atkins-style low-carb dieting because the diet allows controlled carbohydrate portions and balanced eating, and thus makes it easier to stay on the diet long-term. 9.08.13, Low Carb Diet Journal

My weight was 142 lbs. this morning. I can't say that I was surprised because of the amount of ribs I ate last night.

I enjoyed all three cups of my decaf coffee with cream this morning.

We needed to take a trip to Costco and there are two places I like to eat that are in the same vicinity. The first place is a taqueria that makes a really good taco salad that they call a flying saucer. I ordered it without beans and it included carne asada, cheese, guacamole, lettuce, tomato, and sour cream and it was served in a flour tortilla salad bowl. I added pico de gallo to my salad and also enjoyed the pico de gallo with some corn tortilla chips while I waited for my meal. You would think that I would be satisfied with everything that I ate and I was, but I have this dessert belly that has its own separate gauge.

The second place I like to eat at is Cold Stone Creamery. I can't get dark chocolate ice cream at just any Cold Stone, but this one carries it all the time. I can never resist getting the largest cup and the people that prepare it are generous with the almonds that I like to add to my ice cream. Since I had already eaten quite a bit and I intended on eating the every single bite, my husband and I took a walk since the creamery is located downtown. We ended up window shopping and we walked four blocks before going around the block and heading back to our car. It was no where near enough exercise for the amount of food I ate, but it was better than nothing.

9.07.13, Low Carb Diet Journal

My weight is the same as yesterday, 141-1/2 lbs.

I enjoyed my three cups of decaf coffee with cream.

My husband made his recipe of cashew chicken and added broccoli to it. It was a meal in itself so I completed it with some of my homemade dark chocolate almond bark.

I was looking forward to leftover ribs all day so I made a salad to go along with them. My salad included some romaine lettuce, a stalk of celery, homegrown cucumber, and some of our homemade raspberry vinaigrette dressing. There were more ribs than I needed to eat, but I ate them anyway. I really do eat too much protein!

I dropped half of a pound, back down to 141-1/2 lbs.

I enjoyed my three cups of decaf coffee, all of them with cream.

Today my lunch included a cabbage salad made with our homemade mayonnaise, lemon juice, salt, and pepper. My husband seasoned some pork ribs with his recipe of Emeril's Blast and slow cooked them on the barbecue. They were delicious and I only ate three or four of them with the grape tomatoes that we harvested from our garden. I completed this meal with some of my fantastically, delicious, homemade dark chocolate almond bark.

Dinner was leftover pork ribs. I wanted a salad to go along with my ribs so I made mine with romaine lettuce, a stalk of celery, part of a homegrown cucumber, and some of our homemade raspberry vinaigrette dressing. My husband warmed me some pork ribs and I was happy with three more of them to go along with my salad.

I weighed 142 lbs. this morning.

I started my day with three cups of decaf coffee that I enjoyed with cream.

Lunch was a chicken breast that was seasoned with salt, pepper, garlic, paprika, and turmeric and fried in coconut oil. My husband added some cabbage and stir fried it along with the chicken. He also made us a cabbage salad and the cabbage tasted delicious prepared both ways. I completed this meal with some of my delicious homemade dark chocolate almond bark.

Since I finally went to the grocery store and bought some fresh vegetables, I was able to make us salads with our dinner. My salad included romaine lettuce, a stalk of celery, a portion of a homegrown cucumber, and some of our homemade raspberry vinaigrette. I picked up some New York steaks and my husband seasoned them with salt, pepper, garlic, and paprika. He cooked them on the barbecue and along with my salad, it was the perfect meal to end my eating for the day.

9.04.13, Low Carb Diet Journal

I forgot to step on the scale this morning so I still don't know how much I weigh. Actually, I am thinking I don't want to know!

I started my day with two cups of decaf coffee with cream, which turned into three cups, which turned into the whole pot. The only reason I have a problem with drinking that amount of my decaf coffee is because it still contains caffeine and when I drink too much of it, my hot flashes return.

Lunch was two pieces of tilapia that were seasoned with my husband's recipe of Emeril's Blast and fried it in a pan of coconut oil. He made us a cabbage salad with homemade mayonnaise, lemon, salt, and pepper and I enjoyed a hefty helping of the cabbage salad with my fish. I made some of my homemade dark chocolate almond bark but I put it in the refrigerator instead of the freezer and it was not ready when I was. Instead of waiting I grabbed an apple and discovered it did not taste good. Instead of eating it I decided to have some almonds so I grabbed a handful and my meal was complete once I finished them.

I was hungry earlier than usual so my husband made me some of his home cured bacon. This was the first time he ever cured bacon and this batch is salty. I knew it was salty and to be honest, that is why I wanted some. He fried a few slices in a cast iron pan and when they were ready I grabbed the whole plate and ate about three or four slices. Since I was planning on making this meal my second meal of the day I went into the refrigerator and grabbed some of the leftover cauliflower. I heated it up and enjoyed my meal of bacon and cauliflower.

We still have guests so I did not bother weighing myself since my scale is located in the guest bathroom.

I started my day with my decaf coffee and ended up drinking three cups with cream.

Lunch was not planned since everyone was busy trying to locate an alternator so when I got hungry I went into the refrigerator and grabbed a piece of bacon. It was not cooked enough and tasted too fatty for me so I grabbed the half of uncooked linguica and cooked it. My lunch was linguica and celery while everyone else had hot dogs on buns.

We took a two hour round trip to pick up the alternator and after my husband and son-in-law installed it, the kids were ready to go home. They left around 5:30 p.m., and then we had to figure out what we were having for dinner. We had some leftover cross rib roast and a head of cabbage in the refrigerator so my husband reheated the roast and made us a cabbage salad. The cabbage salad was made with homemade mayonnaise, lemon, salt, and pepper.

9.02.13, Low Carb Diet Journal

We still have guests so I did not bother weighing myself since my scale is located in the guest bathroom. To be honest, I ate so much yesterday I would have wanted to avoid it today anyway.

I enjoyed my two cups of decaf coffee with cream this morning.

The kids are leaving so instead of eggs again, my husband made us a cross rib roast for lunch. I made each of us a salad and mine included some avocado, celery, some of our homegrown cucumber, and raspberry vinaigrette dressing. I fixed my plate with a slice of cross rib roast and it tasted so good I had another. Since I did not have anymore dark chocolate almond bark, I made some no bake cookies. I ended up eating one but it was not what I wanted so I did not have anymore.

The kids got ready to go after lunch and they left here around 12:30 p.m. At 1 p.m., I got a phone call telling me that they were in the Walmart parking lot and they had broken down. Before they left we heard a funny sound but it went away after the car warmed up. My husband and I went to help them and my husband got the car running well enough for my daughter and I to take it home. The guys were going to a car parts store and would be following the same route we took in case we broke down. As it turned out, my daughter and I made it home.

Since it is Labor Day and an alternator could not be ordered from the warehouse until the following day, the kids unpacked their car and stayed another night.

9.01.13, Low Carb Diet Journal

We have guests so I did not bother weighing myself since my scale is located in the guest bathroom.

I enjoyed my two cups of decaf coffee with cream and could not resist a third cup with cream.

My husband cooked some bacon, linguica, and potatoes and when they were ready, I cooked the eggs. I fixed my plate with two eggs, bacon, linguica, and potatoes and added ketchup to my eggs and potatoes. When I finished my meal I still wanted some of my homemade dark chocolate almond bark and ate more carbohydrates than I would have liked.

I really wanted to get the downstairs finished so it would be done. When everyone was busy, I went downstairs to try and finish up. My daughter comes downstairs and sees me putting things away so she went back upstairs and came back with some furniture polish and a dusting cloth. The next thing I know her husband is asking me for my Webster so he could take down the spider webs. When we all finished, the game room was not only organized but it was clean!

Our pool table was not handled properly when it was stored because of our downstairs being flooded three years ago. Since my husband would not use it unless it was fixed, our daughter and son-in-law helped him repair it. They did a really good job and when it came time to put the felt back, they needed my help. The pool table is back to being smooth and now we are able to use it again.

My husband seasoned a tri tip and placed it on the barbecue for our dinner. I made each of us a salad and mine included romaine lettuce, celery, some of our homegrown cucumber, and our homemade raspberry vinaigrette dressing. I fixed my plate with tri tip and enjoyed my meal. The tri tip was so good that I ate more than I should have and when I got up to put my plate in the sink I discovered part of a cooked hot dog which I could not resist.

After the dishes were all done, thanks to my son-in-law and daughter, we all went downstairs and had a good time playing pool. Click here to continue reading, or leave a comment »

September, 2013 - CALP Low Carb Journal

This will be my daily journal for the month of September.

My weight was 140 lbs. today and since I won't be stepping on my scale for the next few days, it is the weight that I will be using for the beginning of the month.

The only changes to my diet have been that I am not eating as many salads. I am still eating vegetables and I am very happy with my choices. For the most part, I am still following a wheat and gluten free lifestyle. My gluten weakness comes from the flour tortilla that is used to hold my taco salad and I try not to eat them very often. I continue to eat two meals each day which include protein and vegetables, and still enjoy the one meal where I get to include any carbohydrates that I choose.

I have been following my lifestyle for awhile now and have become more aware of how corn, flour, potatoes, rice, and sugar affect me. If I eat too much of any of those foods, my insulin levels rise and I have a hard time stopping. As long as I balance my meals, my insulin levels are also balanced, and I am in control.

8.31.13, Low Carb Diet Journal

My weight was 140 lbs., this morning and this will be the last time that I will be weighing myself until after the kids go home. My scale is located in the guest bathroom so instead of walking in there every morning and invading their space, I am going to wait until after they leave.

The kids spent the night at my folks house and they were going garage sale shopping with my mom this morning so I don't expect them until later this afternoon. Instead of organizing I got started with the guestroom and guest bathroom. I have a daybed with a trundle so I stripped and washed the bedding, and remade both beds so they would have fresh bedding. I dusted the furniture and vacuumed the carpets and the guestroom was ready. The bathroom was easy since I keep it up on a regular basis but it still takes time to clean everything. When it comes to my bathrooms, I still get down on my knees and clean the floor boards as well as the floors.

Lunch was cod that was seasoned with my husbands recipe of Emeril's Blast and fried in a pan of coconut oil. I fixed my plate with a couple of stalks of celery and a piece of cod and completed my meal with some of my homemade dark chocolate almond bark. I ate more bark than I should have but it tasted so good, I had a hard time stopping.

I cleaned the dishes and my house was in order so I began with my organizing again. Whenever I clean I make messes and a lot of my mess ended up in my bedroom. Since every room in the upstairs portion of my house was done I decided to get my bedroom done instead of finishing the game room downstairs. The time was well spent because I got it all done before they arrived. I did not get a chance to dust or vacuum my bedroom but everything else that was upstairs was done.
