Carbohydrate Addict's Lifespan Program (CALP)

The Carbohydrate Addict's Lifespan Program (CALP) was created by Drs. Richard & Rachael Heller as a way to help people overcome 'carbohydrate addiction'. It differs from Atkins-style low-carb dieting because the diet allows controlled carbohydrate portions and balanced eating, and thus makes it easier to stay on the diet long-term. 10.31.13, Low Carb Diet Journal

My weight is up a pound and a quarter and I weighed 138 lbs. this morning. This just proves to me how easy it is for me to retain water since I only ate one meal yesterday. Sure, my meal was higher in carbohydrates than I normally eat, but it is what I do each and everyday that really matters.

I enjoyed three cups of decaf coffee and added heavy whipping cream to each one. I poured my first glass of water and began drinking my water for the day.

I decided to do a Walk Away the Pounds (WATP) workout this morning. I grabbed my Power Walk DVD and completed all three miles with my two pound hand weights. The reason I decided to get started with my workouts again is because when I went to get my daughter's dog from outside the back fence the other day I got winded when I walked up the hill. Because my goal has always been to become fit and healthy, I will begin to focus on that again.

Right after I finished my workout I began making my husband and me our salads. They were both made with romaine lettuce, celery, cheddar cheese, and our homemade vinaigrette dressing. My husband warmed me up a bowl of the Bombay chicken he made the other day and I was able to enjoy a thigh with the sauce. As someone who would only eat white meat, I was pleasantly surprised that I could not tell the difference between the dark meat and white meat since it was covered in sauce.

When it came time for dinner I was hungry. My husband defrosted some leftover tri tip that he had previously cooked and we split it for dinner. He also warmed up the leftover stir fried cabbage, mushrooms, and zucchini which I enjoyed with my portion of tri tip. After I finished eating my dinner I drank the last cup and a half of decaf coffee that was left in my coffee pot and I added heavy whipping cream to both cups.

10.30.13, Low Carb Diet Journal

My weight is down another three quarters of a pound and I weighed 136-3/4 lbs. this morning.

I enjoyed my two cups of decaf coffee and added heavy whipping cream to both of them.

We lost our connection to the internet yesterday afternoon and we still did not have it this morning so my husband suggested we go to Costco since he could not get any work done. I thought it was a good idea but I was invited to see the ultrasound of my first biological grandchild and I wanted to see if it is a boy or a girl. The appointment was for 10:30 a.m., so I got ready to go to the doctor's office and I had my husband join me so we could continue on to Costco since I did not want to take the extra time to come back and get him.

The appointment went well but the baby was not in the right position for us to get a peek of what sex it is. We heard and saw a nice strong heartbeat, but the baby was facing downwards and his/her legs were blocking our view. There is another anatomy ultrasound scheduled for some time next week, so if the baby is in the right position then, we may be able to see if it is a boy or girl.

My husband and I left the appointment and it took us an hour to drive to the taqueria we like. We were both hungry and it was already past noon by the time we got there. I ordered a carne asada flying saucer, which is a taco salad with beans, carne asada, cheese, lettuce, guacamole, & sour cream in a fried flour tortilla shell. While it was being prepared, I enjoyed some fresh chips and pico de gallo. When my taco salad arrived, I poured the remaining pico de gallo over the top and began eating my lunch. 10.29.13, Low Carb Diet Journal

My weight is down another three quarters of a pound and I weighed 137-1/2 lbs. this morning.

I started my morning with two cups of decaf coffee and I added heavy whipping cream to both of them. Instead of drinking more coffee, I poured my first glass of water knowing that I still had a couple more cups left for later if I wanted.

I needed to go to the grocery store today because it was the last day that the chicken thighs were on sale for $.68/lb. and my mom asked me to pick up six packages for her. Since I did not know if there was a limit, my husband went with me. We ended up going to the post office to pick up our mail and then we went to the store. We picked up two whole turkey breasts, eight packages of chicken thighs, and one package of pork chops because we were going to have them for lunch since pork chops are easy to make. We also picked up two heads of romaine lettuce, mushrooms, and a package of Monterey Jack cheese.

After we arrived home and put away all the groceries, my husband fried two pork chops, putting the remainder of the package into our freezer. We still had some red cabbage and a zucchini in our refrigerator so he chopped that up with some of the mushrooms that we picked up today and stir fried them in coconut oil. My lunch included one pork chop and some of the stir fried mixed vegetables which I truly enjoyed.

Right after lunch my husband started our dinner. He made the Bombay chicken recipe that we both enjoyed last week except this time he made it with chicken thighs. I do not like dark meat chicken by itself, but I believe I have had it with sauces at Indian restaurants, so I am willing to give it a try. 10.28.13, Low Carb Diet Journal

My weight is down three quarters of a pound and I weighed 138-1/4 lbs. this morning.

As I mentioned yesterday, limiting my coffee to two cups each day is not helping my hot flashes so I had three cups this morning. I added heavy whipping cream to each one and when I finished them I poured me my first glass of water for the day.

My husband still had some chicken leftover from the other day so I decided to have another omelet for my lunch. Unfortunately, when my husband got ready to make it I discovered we were out of Monterey Jack cheese so I no longer wanted it. I decided to have a pork chop so my husband had to defrost two of them since we freeze them two at a time. We finished the last of our lettuce yesterday so my husband went out to the garden and picked me a green bell pepper to go with my pork chop. He fried my pork chop and half of a bell pepper in coconut oil and placed them on a plate for me. I enjoyed my meal and even though there was another pork chop cooked, I did not eat it.

When I went out to feed my animals I could not find my daughter's dog. I called him and saw him on the other side of our gate. I live on sixteen acres and his location caused me to walk up a hill and to our back gate. I discovered that it was locked so as I was walking back to the house to get the key, I stopped to watch how he got out by watching him crawl back under the fence to return to our property. 10.27.13, Low Carb Diet Journal

My weight is the same, 139 lbs.

I started my day with three cups of decaf coffee and I added heavy whipping cream to each one. When I finished my second cup I wanted more so I caved in and had a third. As soon as I finished my last cup I poured my first glass of water and began drinking it.

Even though I did not get to bed until after 1:30 a.m., I was awake by 6:30 a.m. Because I had such a long day yesterday, I was hungry about three hours later. My husband defrosted a New York steak for our lunch but instead of waiting until around noon to eat, I decided to have an omelet. He made mine with two eggs, two slices of bacon, jack cheese, and some of our homegrown bell pepper. After I finished my omelet I went to the kitchen and snacked on two more pieces of bacon, not because I was still hungry, but because it was good!

Since limiting my coffee to two cups each day has had no effect on my hot flashes, I decided to have more. I expected there to be two more cups left in the pot but there was only one and a quarter. I added heavy whipping cream to both of them and enjoyed the remainder of my coffee.

I thought I would be hungry earlier than usual since I ate my first meal earlier than I normally do, but I wasn't. When it came time for dinner my husband started the barbecue so he could grill the New York steak he took out of the freezer earlier. When the barbecue was almost ready I made a fresh batch of our homemade vinaigrette dressing and proceeded to make each of us a salad. My salad included romaine lettuce, celery, and some of our homemade vinaigrette dressing. Our salads were ready before the steak so I began eating mine. The steak was ready soon thereafter and I enjoyed the rest of my salad with my steak.

10.26.13, Low Carb Diet Journal

My weight is still 139 lbs.

I started my day with two cups of decaf coffee with heavy whipping cream. After I finished, I poured my first glass of water for the day.

I picked up some flour tortillas when I was at the store yesterday so I wanted to finish making the empanadillas since I still had some pastele meat left. I had bought a package of twenty so my husband and I worked together to make the empanadillas. My husband fried them in lard while I continued to assemble them and when they were all ready, he could not resist sampling them. Once they were cool, we put them in a plastic bag and put them into the freezer so they are available anytime anyone wants them.

My sister and her partner were having their wedding reception this afternoon so I wanted to eat something before I went. I knew that I would do much better at following my program if I ate before I left so my husband made me an omelet. My omelet included three eggs, some of our homegrown bell pepper, linguica, and mushrooms. Because it was so large, I was unable to eat it all.

I cleaned up the kitchen and got ready to go. I never wear makeup but I decided to put some on since I was going to my sisters reception. I can't believe how long it took me to put it on but I started early enough that we still made it out of the house at the time that we planned. The reception was an hour and a half away so we made one stop at Costco to fill up our car with gas and arrived a half an hour early. My husband and I unloaded the potato salads and macaroni and cheese and put them into the refrigerator. We were only there about five minutes before my cousins arrived and then our oldest daughter and her husband arrived a couple of minutes later. 10.25.13, Low Carb Diet Journal

My weight is up a pound and I weighed 140 lbs. this morning.

I enjoyed my two cups of decaf coffee with heavy whipping cream. As soon as I finished both of them, I poured my first glass of water and began drinking it.

We had some leftover pastele meat so while I was in town this morning, I picked up another package of flour tortillas. I did not get home until after 2 p.m., and as soon as I had a chance I made my husband and me a salad. He warmed up my leftover chicken breast and wing, and when it was ready, I put it on a plate and enjoyed it along with my salad. I have not had any sugar in awhile so since I am back to CALP and adding carbohydrates back to my one meal each day, I defrosted one of my homemade cheesecake cupcakes and thoroughly enjoyed it.

My sister is having her wedding reception this weekend and asked me to bring a couple of potato salads. Because she is having so many kids at the reception, I also made a huge batch of cheese for the macaroni and cheese that I will be adding to the cooked macaroni when the food is served.

Since I did not eat until after 3 p.m., I did not need or want anymore food when it came time for dinner.

My weight is the same, 139 lbs.

I started my day with two cups of decaf coffee and added heavy whipping cream to both cups.

My husband made us a whole chicken for lunch and after adding the smoke chips, he smoked it on the barbecue. When it was almost ready I made us each a salad. Mine included romaine lettuce, celery, cheddar cheese, jack cheese, and some of our homemade vinaigrette dressing. When the chicken was ready, I grabbed a breast and wing and put them on my plate. I started eating my salad and when the chicken was cool enough, I ate it with the remainder of my salad.

My husband and I went to town and when we were at the store, I picked up some flour tortillas and olives so I could make the empanadillas. I gave my mom my dough press so we stopped at the Kitchen store and picked one up on our way home.

I made the empanadillas by adding the pastele meat and an olive to the tortilla and then I used the press and turned them into meat turnovers which we call empanadillas. My husband melted the lard and as soon as it was ready he began frying them. After they cooled down, he ended up eating four of them. Since I could not resist the way they looked and smelled, I ended up eating one with extra pastele meat.

Since I caved in and ate the flour tortilla, exceeding my twenty grams of carbohydrates, I am no longer following the Atkins induction. In the end it always comes back to how much I love the freedom of following CALP, so that is what I will continue to do.

My weight is still the same, 139 lbs.

I started my day with two cups of decaf coffee and added heavy whipping cream to both of them.

The last time we went to the store, my husband and I bought some pork roasts so we could make empanadillas. He cut up one of the roasts while I made the sofrito and after the meat and sofrito were both cooked, we mixed them together. Since I did not have any flour tortillas, we put the meat into the refrigerator until the following day when we planned on going to town to pick them up, among other things.

We had leftover tri tip and a salad for lunch. My husband put the tri tip into the toaster oven to warm and I made us each our salads. Mine included romaine lettuce, celery, and some of our homemade vinaigrette dressing. When the tri tip was warm, I enjoyed it along with my salad.

For dinner, my husband made us a recipe called Bombay chicken which was shared by a long time CALPer on a support group that I visit from time to time. He used skinless, boneless, chicken breasts even though the recipe called for bone-in chicken. When it was ready, I fixed me a bowl and it was delicious. As a matter of fact, it was so good that I want to have it again next week. Since I wanted to taste the pork pastele meat and make sure that it had enough sofrito, I also ate a couple of spoons of it.

10.22.13, Low Carb Diet Journal

I got up earlier than usual since I could not sleep so I did not step on the scale right away. It was only 3 a.m., so I did not bother making me any coffee since I really wanted to be able to go back to sleep. I never did get back to sleep so I stepped on my scale around my normal time and I was 139 lbs.

I ended up drinking two cups of decaf coffee and added heavy whipping cream to both cups. As soon as I finished them, I poured my first glass of water and began drinking it.

Since I got up so early, I became hungry earlier than usual so my husband made me an omelet for my brunch. It started with three eggs, two pieces of chopped bacon, some jack cheese, and chopped mushrooms. It was exactly what I wanted and I ate every single bite.

My husband started the barbecue because we were having beef tri tip for dinner. When it was almost ready, I made us each a salad and mine included romaine lettuce, celery, cheddar cheese, and our homemade vinaigrette dressing. My husband cut me a chunk of the tri tip and it was so good, I am sure that I ate too much.
