I wanted to get started on my Bowflex workout but circumstances prevented me from getting it done. It was not a big deal since Sunday's are usually my day off so I had to make Saturday my day off this week instead.

Lunch was a pork chop again. I had to defrost a couple of them, but I only cooked one for me. I opened a can of green beans and after draining the liquid, I added the vinaigrette dressing to them. I dished up half of them into a bowl and placed the remainder into the refrigerator for another day.

Dinner was chicken enchiladas. My husband made some home made enchilada sauce and then warmed up the chicken and tortillas. I dished up the meat into the tortillas and after adding jack cheese over the top, I placed them into a casserole dish so we could bake them in the oven. I offered to make my daughter some cheese enchiladas but discovered I did not have enough enchilada sauce. I began making my salad while my daughter decided to make her own enchilada sauce from the recipe my husband gave her. The enchilada sauce takes a half an hour to make, so our enchiladas were ready to come out of the oven around the same time she was ready to put her cheese enchiladas into it. I began my meal with my salad and I added six celery stalks to it as my vegetable. I drizzled some Ranch dressing over the top and as soon as I finished, I dished up two enchiladas onto my plate. I could have easily stopped eating after the first one, but I wanted to make sure I ate enough and devoured the second one too. I felt I only had enough carbohydrate room for one dark chocolate almond cluster and I was completely satisfied after eating it.

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
