3.14.13, Low Carb Diet Journal

My weight popped back up to 131 lbs. this morning, and the only thing I can guess is that I ate too much protein yesterday. Of course, I have no idea why it does what it does so I will assume that it is “just because”!

I enjoyed both cups of my coffee with cream, and started a load of laundry. We were expecting another beautiful day so instead of waiting until after lunch to go outside, I went out early. I keep reading how staying active is just as good as exercise so I proceeded to feed the chickens and I was able to collect one egg. I then went into the rabbit barn and got started with cleaning the cages. I removed the shade cloth from under each one of the rows of cages, and began hosing them down. When I got ready to hang the first one, I decided to wait and moved those rabbits to another row that already contained rabbits. I worked for three hours and then my husband called me in for lunch.

We had a recipe that we got from Google+ that we wanted to try. It is called Thai Pra Ram Chicken in Peanut Sauce. It was made with chicken breasts, broccoli, carrots, coconut sugar, peanut butter, soy sauce, water, coconut oil, garlic, coconut milk, curry powder, and red pepper flakes. I fixed my bowl with a small amount of rice and then I topped it off with the chicken recipe. It was delicious and we will be making it again. I then grabbed one of my cheesecake cupcakes and it was also delicious. My meal was fantastic and I definitely look forward to eating the same exact meal tomorrow!

Right after lunch, I placed the dishes in the dishpan to soak so I could return outside to finish my work. I finished hosing down all of the shade cloth except one, placing four of them back under four rows of cages. I moved a total of six rabbits to the empty cages in the three rows that already contained rabbits, so now I will only have three rows that I will have to keep clean instead of six. I ended up working another four hours until I began getting cold. Although it was not cold outside, I was wet and I could feel the temperatures beginning to drop. I collected one more egg and returned to the house.

My dishes were still waiting for me so I got them done. I cleaned the egg to put into the refrigerator and then I was ready to hop into the shower. I transferred the clothes I had washed earlier into the dryer and my husband put the leftover ribs into the toaster oven for my dinner. Unfortunately, I did not make it into the shower because the phone rang. I chatted with my sister and when my ribs were ready, I placed them on a plate with some of our leftover asparagus. I completed my call and then added some mayonnaise to my asparagus. I love leftovers and thoroughly enjoyed my meal. I washed the dishes, treated my dogs ear, and then it was finally time for me to get into the shower.

After my shower I returned to the living room. I grabbed my computer so I could leave a positive comment about the cupcakes and then I updated my menu from earlier. The clothes were dry but I left them in the dryer because they were towels and I did not have to worry about wrinkles. I then proceeded to watch The Big Bang Theory and American Idol since they were both recorded on my DVR, skipping every single one of the commercials.

About me

I'm Teri and I am 54 years old. I have been fighting my weight since I was fourteen, dieting my way all the way up to 236 lbs. I started my weight loss program on March 3, 2008, and at that time I was unable to get into the largest pair of jeans I owned, size 18W. I have lost close to 100 pounds, and I now wear a size 4 jeans. My diet and exercise program have me feeling better than I could have ever imagined and I did it without starving or depriving myself in any way.

I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day.
